I can’t believe Father’s Day is already this weekend. Summer will be over before we know it! Meanwhile, I’ll be adding any needed ingredients for this decadent cake to my grocery cart. It is always a hit!
If you are loving the poke cake trend, be sure to try this Caramel Apple or Red White and Blue Cake. There are just so many great flavor options you could try.
A poke cake is simply made by poking holes in it after it has been baked. You can use the back of a wooded spoon, or a large straw for best results. Pouring your favorite flavors evenly in the holes allows you to customize the results. Remember, the more holes you poke equal more gooey goodness!
This cake should be stored covered in the refrigerator for at least 4 hours before serving. For best results, let the poke cake set overnight to give the cake plenty of time to get firm. Eat the cake within 5 days to avoid it becoming overly wet. To freeze a poke cake, wrap several layers of plastic wrap around the cake and top with aluminum foil. It should keep for around 2 months.
Make this recipe even easier by only pouring chocolate fudge in the holes. Finish, by topping it with the cool whip and peanut butter mixture. A can a sweetened condensed milk can also be substituted for the pudding mixture. Add additional sauces and toppings of your choice before serving. Chocolate chips or toffee bits are other great topping options. Chocolate syrup and extra whipped cream make this recipe even more decadent.

This Chocolate Peanut Butter Poke cake is so easy to make with box cake mix, chocolate fudge, vanilla pudding and plenty of peanut butter cups.
Prepare the cake mix according to the package directions and allow to cool completely
Poke holes around every 1 inch using the back of a wooden spoon or a large plastic straw.
Whisk together the pudding mix and milk.
Add 3/4 C. of peanut butter to the pudding mixture and whisk until smooth.
Heat the jar of chocolate fudge for around 30 seconds or until pourable.
Pour the chocolate fudge evenly over the cake holes.
Pour the pudding mixture over the holes and spread until evenly coated over the cake top.
Whisk together the whipped topping and 1/2 C. of Peanut Butter.
Evenly Spread over the top of the cake.
Top with roughly chopped peanut butter cups.
Cover and refrigerate for at least 4 hours before serving.

This Holiday Coconut Margarita Pitcher is perfect for entertaining guests throughout the winter. Fresh cranberries and a sugared rim complete this margarita with tequila, white cranberry juice, Malibu, fresh lime juice, orange juice and coconut milk.
Prepare cocktail glasses by rubbing a fresh lime around the rim and dipping in a plate of sugar to coat.
Add the fresh cranberries, lime juice, orange liqueur, white cranberry juice, orange juice, tequila, Malibu and coconut milk to a glass pitcher (around 90 oz.).
Lightly stir until mixed.
Serve over ice in prepared low ball or margarita glasses.

Finish off this fun cocktail with a Bomb Pop on top for a fun party drink. The layers become clearer as the martini sits for. Place jars with ice around the martinis with Bomb Pops as an alcohol-free option to enjoy at the same time.
I tried several different variations and found that this combination worked the best for creating layers without being overly sweet. A bit of pineapple juice balances out the acidic flavor of Bicardi Limon. The higher density of the Blue Curacao and Grenadine helps create the layered effect.

This Bomb Pop Martini has layers of red, white and blue that make a perfect martini for the 4th of July or Memorial Day. The fun, patriotic appearance is achieved with Bacardi Limon with pineapple juice, Blue Curacao and Grenadine.
Add the Bacardi Limon and pineapple juice to a cocktail shaker that is around 2/3 full of ice. Shake until chilled.
Strain the pineapple juice mixture into an 8 oz. martini glass.
Tilt the martini glass forward and slowly pour the Blue Curacao so that it is sliding down the glass into the mixture. Avoid pouring it directly into the liquid.
Allow the mixture to settle.
Tilt the martini glass forward and slowly pour around .75 Oz. of Grenadine down the glass. Avoid pouring it directly into the liquid.
Add a toothpick to the top of a bomb pop and place it on top of the glass (optional).
These Easter Peep Martini has a sweet, marshmallow flavor that doesn’t overpower. The addition of your favorite pastel colors with a candy Peep garnishment and green sugar rim makes it perfect for spring celebrations.
This cocktail would be perfect for baby or wedding showers. Just eliminate the peep and add different colored sugared rims as desired. It is a perfectly, sweet dessert cocktail that has marshmallow flavors without the overpowering sweetness of an actual peep.
It is so simple to infuse your vodka and add a bit of color to it for easy preparation of this Easter Peep Martini. You can use a Mason Jar such as this one. I added around 1 C. of mini marshmallows and a few drops of food coloring to each jar with around 1 C. of Vodka. Let it sit overnight and you will have a nice infused, Marshmallow Vodka. Just ensure that you strain out the marshmallows before using.
You can also, purchase Marshmallow flavored vodka at a liquor or grocery store. I have used Smirnoff Fluffed Marshmallow vodka to make a S’mores Martini and loved the results.
You can purchase Toasted Marshmallow Syrup or make your own. Here is my recipe for it. I have used different syrups by this brand that you could use to make your martini as well. Use any extra to flavor your coffee or lattes.

Prepare the green sugar rim by mixing a couple of drops of gel food coloring with coarse sugar in a small bowl.
Spread the sugar unto a small plate.
Run a lemon around the rim of a martini glass or dip the rim in honey.
Dip the rim in the green sugar mixture until coated.
In a cocktail shaker; add the ice, marshmallow vodka, Baileys, marshmallow syrup and Half & Half. Add a drop or 2 of desired pastel food coloring if not using colored, infused vodka (see instructions above).
Shake until chilled and combined.
Pour into the prepared martini glass and top with a Marshmallow Peep.
