I made it through another Girl Scout cookie season with plenty of extra boxes to spare. I may have felt a little bad about the changes this year and purchased a few or ten too many. What better way to use them up than to make an inspired martini with a Thin Mint cookie garnishment!
This creamy martini is just so flavorful and like drinking one of these popular cookie delights. Feel free to leave out the green food coloring if that isn’t your jam. However, I strongly advise to ensure a nice floating of whipped cream and chocolate shreds make it to the top of every glass.
I prefer to use a glass cocktail shaker with measuring lines like this one here. Just watch out for some cold fingers! A vigorous shake really cools things up fast. I use this brand of chocolate liqueur, but any will really do with this recipe. Chocolate curls are easily achieved with a veggie peeler like this one. Just run the peeler down the side of your preferred candy bar (I prefer dark chocolate).

In a cocktail shaker, around 1 C. of ice, Baileys, Peppermint Schnapps, Vanilla Vodka, Creme de Cacao Liqueur and green food coloring (optional).
Shake until chilled and strain into a martini glass.
Add a generous floating of whipped cream.
Top with chocolate shreds and a Thin Mint cookie if desired.
These Strawberries and Cream Layered Jello Shots are a festive Valentine’s Day treat with whipped cream vodka. A heart made out of melted white chocolate and sugar sprinkles makes the perfect topper.
I love how versatile Jello shots are for the holidays. I made these last weekend without alcohol so that my kids could enjoy them as well. The cream layer gets added flavor from pineapple juice and requires gelatin packets for firmness.
Layered Jello shots are much easier to make than you think. The hardest part is being patient enough to let each layer set before adding the next one. My Red White and Blue Jell-O Shots are a great example of layering 3 different colors horizontally. These Strawberries and Cream Layered Jello shots are easily made in a beautiful diagonal pattern by letting the first layer set at an angle in muffin tins. You can also, make horizontal layers if you want to take the easier route. Just let each layer firm up for about an hour before placing the next cooled layer.
The heart topper can be made out of white chocolate chips or white chocolate melting wafers. I prefer the taste of the Ghirardelli brand for either variety. I added around 1/2 c. of chocolate chips to a small microwave-safe bowl with a dollop of coconut oil. You can also, use a bit of butter instead. Use a sheet of parchment paper as your work service to avoid any sticking.
When microwaving chocolate, ensure that you are only using around 30-50% power to avoid the chocolate hardening when it melts. Stir in 30 second intervals until completely melted. Once the chocolate is melted, place it in a plastic baggie and trim a small slit in one of the corners. Squeeze out the chocolate into a heart shape and sprinkle with colored sugar sprinkles immediately. Work quickly to avoid the chocolate hardening!
The shot glasses are available on Amazon. You can also, substitute the more water or pineapple juice in place of the alcohol for a kid-friendly version.

These Strawberries and Cream Layered Jello Shots are a festive Valentine's Day treat with whipped cream vodka. A heart made out of melted white chocolate and sugar sprinkles makes the perfect topper.
Add the white chocolate chips or wafers to a small microwave-safe bowl.
Microwave at 30-50% power in 30 second intervals until melted; stirring frequently until melted.
Place a layer of parchment paper on the work surface.
Add the melted chocolate to a plastic baggie.
Trim a small hole in one corner of the plastic bag.
Squeeze out the chocolate into heart shapes onto the parchment paper.
Immediately sprinkle each heart with colored sugar sprinkles.
Carefully remove heart from parchment paper once cooled.
Bring one cup of water to a boil and stir into the Strawberry Jello mix until dissolved. Stir in 1/3 C. of cold water and allow to set until cooled. (May place in the fridge for around 20 minutes).
Once cooled, stir in 2/3 C. of vodka. Pour mixture into shot glasses so that they are around half full. Note: Place shot glasses into muffin tins and tilt glasses at an angle (see picture in post).
Refrigerate until thickened for around 1-2 hours.
In a small bowl, mix gelatin mix and pineapple juice together.
In a small saucepan, bring heavy whipping cream and sugar to a near boil; stirring constantly.
Remove from heat and stir in the pineapple juice mixture.
Allow to cool to room temperature (may stick it in the fridge for a bit to speed the process).
Once cooled, mix 2/3 C. of vodka into the whipping cream mixture.
Add the whipped cream mixture to the opposite side of the firmed strawberry layer in the shot glasses.
Allow to firm completely for 1-2 hours.
Top the Jello Shots with whipped cream, sprinkles and the white chocolate heart right before serving.

These Soft Gingerbread Cookies with Icing are so festive and easy for the holidays. Add decorator icing and candies to make a gingerbread man or enjoy them plain for a quick addition to your cookie platter.
I worked on this recipe for a couple of days before I was happy with the results. The result is a nice, soft cookie that is easy to roll out with your favorite Christmas shapes. It requires minimal chilling in the refrigerator and it is really fun to make with the kids.
I have been using this icing recipe since I was making cookies in elementary school. It dries perfectly and is great to work with for piping. I kept my icing white for the gingerbread men, but tripled the recipe so I would have enough to decorate my Sour Cream Cut-out Cookies.
To make these cuties, you will need to have your favorite cut-outs. I used 3 different gingerbread men cookie cutters. A star or round biscuit cutter also works great for these. I highly recommend using parchment paper whenever making these cookies. Nothing is worse than having your hard work ruined when the cookie crumbles from sticking to the pan. A good Silicone Pastry Mat makes the dreaded clean up so much easier. I purchased this one this year and I’m wondering why I didn’t get one sooner. A cooling rack is needed to transfer the cookies to after baking.
It is essential that you chill your dough for at least 1 hour prior to rolling it out. This will keep the cookie from spreading in the oven and looking like a blob instead of a gingerbread man. Ensure that you separate your dough into two separate balls and lightly press down so that it is disk-shaped. Wrap the disks in plastic wrap before chilling.
Once the dough is chilled, roll the dough out over a light dusting of flour until at is around 1/4″ thick. Repeat the process with any scraps if it is still moist enough to make a smooth surface. Bake the cookies at 350 degrees for around 8 minutes or until the edges become lightly browned. Do not overbake if you want your cookies to remain soft.
After the cookies are done baking, place them on a cooling rack. Allow the cookies to cool completely before decorating them with icing.
Ensure the icing has hardened before transferring the cookies into storage containers. Place wax paper between the cookie layers if stacking them. Cookies are best if consumed within 7-10 days. If baking them early, they may be stored in an airtight container in the freezer for up to 2 months.

In a large bowl; combine flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
Beat together butter and brown sugar; beat in the egg, vanilla and molasses.
Slowly beat in the flour mixture until combined and smooth.
Separate the dough into two equal sections. Roll each section into a ball and lightly push down until it is a large disk.
Wrap each disk in plastic wrap and chill for at least 1 hour.
Lightly flour a pastry mat or surface before rolling the dough. Roll the dough out evenly until around 1/4" thick. Use desired cookie cutters to make shapes and place cookies on a cookie sheet covered with parchment paper.
Bake at 350 degrees for around 8 minutes or until edges become a light golden brown.
Add cookies to a cooling rack and allow to cool completely before decorating.
Begin beating the softened butter and gradually add the powdered sugar.
Add 2 tbsp. of milk and vanilla; continue beating. If icing still seems too thick; add around 1/2 tbsp. more of milk.
Place icing in pastry bags with a plain piping tip. Top with desired icing patterns and candies.
Allow icing to dry and harden before placing cookies in storage containers. Use wax paper between cookie layers when stacking to avoid sticking. Cookies are best if consumed within 7-10 days if stored in Tupperware.
Freeze cookies as needed in an airtight container for up to 2 months.

This Grinch Sangria with Pinot Grigio, Midori and pineapple juice is a sweet addition to your Christmas menu. A red sugar sprinkle rim and a small strawberry heart cut-out make this gorgeous cocktail festive for the holidays.
The Grinch is one of my family’s favorite films to watch over the holidays. His green body and little heart embody the grumpy character that I can relate to after an endless 2020. This cocktail mimics his appearance, but adds the sweetness that his character takes on in the end.
A heart cut-out makes the perfect garnishment to this Grinch Sangria and it is also a great addition to this Strawberry Rose Sangria for Valentine’s Day. You can use a small paring knife to carve them or make your own little aluminum cut-out. I created mine with a disposable aluminum baking pan that was leftover from last year’s holiday feast.
Use a rolling pan to flatten any indentations and cut it into strips around 3-4 inches wide. Fold each end in around 1 inch and flatten again with a rolling pin. Use a marker to shape the top part of the heart and continue working with it until the desired heart shape is achieved. Cut any remaining length off and seal with a glue gun.

In a large pitcher, add sliced strawberries, Midori, pineapple juice and Pinot Grigio.
Lightly stir ingredients and add a splash of Sprite.
Prepare the punch glasses by lightly dipping the rims in a plate of honey and a plate of red sugar sprinkles until coated.
