This Broccoli Cheddar Breakfast Strata with Blender Hollandaise Sauce is the perfect, savory breakfast casserole for the upcoming holidays. A layer of french bread gets topped with turkey bacon, and a medley of broccoli, cheddar and egg. The casserole is drizzled with an easy, hollandaise sauce straight from the oven.
I’m usually a sweet breakfast casserole fanatic, but holy eggy goodness! This combo is the best savory breakfast dish I have ever tasted…seriously. The french bread adds a welcome layer of texture and you just can’t go wrong with a broccoli cheddar combination. This SAUCE is my new love! I’m thinking 30 ways to use hollandaise…can we just pretend that it is healthy? Next month can be everything oats and egg whites…blah, blah.
Seriously though, let’s take a break from my love affair with bread and egg for a sec. I’ve tried to show you how simple it is to piece this beauty together. A layer of cubed french bread begins the journey of egg goodness. I cut mine into around one inch cubes or so.
Then, you will want to halve your turkey bacon and fry it until just crispy. Put a single layer of it over your bread, wipe out your skillet and sauté the broccoli and garlic mixture. Whisk your eggs and milk together and gently stir in your broccoli and cheddar cheese.
Pour it all over the top of your bread and wait for that magical aroma to enter your life…holy yum situation has arrived!
Blenders are our friend…how else would we make frozen margaritas and pina coladas? OH, and this no fuss hollandaise sauce! Just blend it up and add it to the top of the casserole while warm and try your hardest to share with others.
Its been a little while since I’ve posted something (house for sale manic cleaning preoccupation), so I really wanted to knock your brunch socks off! I hope I’ve done it for you…my husband certainly enjoyed around 3 portions of it at once. My whole family came over and had it for dinner along with a crockpot of mulled wine. Is that a winning combination or what?

- Around half a loaf of French Bread; cut into 1" cubes
- 12 oz. Package of Turkey Bacon
- 2 Tbsp. Butter
- 12 Eggs
- 2 C. Milk
- 4 Cloves of Garlic; minced
- Half of a Yellow Onion; finely diced
- 4 C. Fresh Broccoli Florets; stems removed
- 1 1/2 C. Shredded Sharp Cheddar Cheese
- 2 Tsp. of freshly chopped chives
- Hollandaise Sauce:
- 1 Stick of Butter
- 1/4 C. Lemon Juice
- 4 Egg Yolks
- 1/4 Tsp. Cayenne Pepper
- Salt to Taste

Spray the bottom of a 13x9" baking pan with nonstick cooking spray.

Line the bottom with a single layer of bread cubes.

Cut turkey bacon in half; sauté until lightly browned and crispy.

Transfer to a plate lined with paper towels.

Wipe out skillet.

Add a single layer of turkey bacon to the top of the bread cubes (will have extra).

Cut broccoli florets into smaller pieces so that they are no bigger than an inch or so wide.

Add butter to the skillet; heat to medium high heat.

Add garlic and onion; sauté for around 2 minutes until onion slightly translucent.

Add broccoli and salt/pepper to taste; saute until broccoli is slightly tender for around 3 minutes.

Remove from heat.

In a large bowl; whisk together eggs, milk and salt/pepper to taste.

Gently stir in broccoli mixture and cheddar cheese.

Pour over the top of the turkey bacon.

Preheat oven to 375 degrees.

Allow egg mixture to set for around 5 minutes before baking.

Bake for around 30 minutes or until top is lightly browned and center is firm.

Prepare Hollandaise sauce:

Add egg yolks, lemon juice, salt and cayenne pepper to the blender bowl.

Melt butter in a bowl in the microwave until bubbly, but not browned.

Slowly add in hot butter while blending; blend for around 30 seconds after all butter has been added.

Add more salt or cayenne pepper to taste as needed.

Pour sauce over casserole while warm.

Top with fresh chives and enjoy!
