This Easy Fresh Strawberry Pie is perfect for summer BBQ’s and 4th of July. It is easily prepared with pre-made pie crust with a fresh strawberry filling that is thickened with a bit of Jell-O and cornstarch.
I made this recipe for Father’s Day and it was a huge hit. It goes great with BBQ and is so refreshing and easy to make. Check out my tips below for no-fuss tips for prepping fresh strawberries. The addition of a few blueberries is great for a patriotic, 4th of July dessert.
Increase the longevity of your whipped cream by simply mixing in a bit of vanilla pudding. I use a chilled mixing bowl and beat around 1 1/2 cups of Heavy Whipping Cream on high until thickened and then, whip in around 2 tbsp. of vanilla pudding. This is great for extra flavor as well!

This Easy Fresh Strawberry Pie is perfect for summer BBQ's and 4th of July. It is easily prepared with pre-made pie crust with a fresh strawberry filling that is thickened with a bit of Jell-O and cornstarch.
Mix together the cornstarch and sugar.
Add water and sugar mixture to a pot over medium heat; whisky until combined and thickened.
Remove pot from heat and stir in Jell-O and allow to cool.
Prepare pie crust according to package instructions.
Allow crust to cool completely.
Thoroughly rinse the strawberries, pat dry with paper towels, mull and cut in half (see tips above). Add to a mixing bowl.
Lightly stir in cooled Jell-O mixture with the fresh strawberries until coated. Evenly spread into the bottom of the cooled pie crust.
Chill in the refrigerator for at least 3 hours until thickened before serving.
Garnish with whipped cream and fresh blueberries before serving (see tips above for stabilized whipped cream).

Strawberry Mango Salsa with Cinnamon Chips is simple to make and the perfect, refreshing summertime appetizer. Fresh strawberries and mangoes get added to this flavorful salsa with a touch of lime juice and mint. Tortillas get brushed with melted butter, sprinkled with cinnamon and sugar, and cut into triangles before baking into a crispy chip.
I can’t tell you how many times I have bought strawberries and ended up pitching them because they go bad before I get around to using them. Making a quick salsa is a great way to use them up and sneak in some extra servings of fruit with lunch and dinner. This Strawberry Mango Salsa is so refreshing and can be used on an array of dishes. It makes the perfect topping to a refreshing summer salad with a bit of chicken for a complete meal. It adds the perfect bit of sweetness to a baked or grilled Tilapia or Mahi-Mahi.
My picky daughter is obsessed with this Strawberry Mango Salsa with Cinnamon Chips. I couldn’t believe how much she ate the first time I made it. It is always such a bonus when you find sneaky ways to get your kids to eat more fruit! This has been previously achieved with Strawberry Cheesecake Fluff and an Easy Fruit Pizza. The sweetness of it all probably didn’t have much to do with it, right?
If you are entertaining for the 4th, this dish is so easy to make ahead of time. Just put your salsa in a sealed container the night before and stick your ready-made chips in a Ziploc bag. I recommend using white flour tortillas such as these for best results. All this time saved gives you more time for grilling and having a beverage or three. I highly recommend preparing a bucket of Whiskey Sour Slushes or Watermelon Margaritas the night before. Broccoli Slaw Salad is a different spin on a classic and always a hit. Okay, I just need to find a cute patriotic outfit to go with all of these goodies.
MORE TO LOVE
Preheat oven to 350 degrees.
Add all salsa ingredients to a medium size bowl, lightly mix, cover and refrigerate.
Stack tortilla shells on top of each other.
Lightly brush the top of each tortilla with melted butter.
Cut tortillas like a pizza into 8 even triangles.
Add tortilla pieces in a single layer on a cookie sheet.
Mix the cinnamon and sugar together in a small bowl.
Lightly sprinkle tops of tortilla pieces with the cinnamon mixture.
Bake for around 8 minutes or until crispy.
Allow chips to cool and serve beside the salsa.
Store any leftover chips in sealed Ziploc bags for up to 3 days.

This Strawberry Cheesecake Fluff is the ultimate, easy summertime dessert. It is perfect for potlucks and summertime BBQ’s and can be thrown together quickly with pudding, cool whip, sour cream, fresh strawberries and a graham cracker crumb topping.
I used to love picking the marshmallows out of the ambrosia salad my mom always used to make for potlucks. This dish is inspired by that, but with the yummy cheesecake flavor I just can’t get enough of.
It was definitely a hit with my whole family [my daughter got upset anytime someone tried to eat some of it]. We were about to have a total Gollum from “Lord of the Rings” type of situation.
A ring of fresh strawberries makes this dish look fancier and adds a beautiful pop of color. A sprinkle of graham cracker crumbs enhances the cheesecake flavor experience. No need to heat up the house with that oven as the days become warmer [I think is going to be warmish today].
Maybe, spring is finally starting to sprout around these parts. In any case, I refuse to wait for warmer weather to indulge in plenty of frozen cocktails and no-bake desserts.
If you enjoyed this Strawberry Cheesecake Fluff, I highly recommend also adding an Easy Fruit Pizza or Chocolate Strawberry Cheesecake Lasagna. They are both fruity, easy to make and require no baking!

This Easy Fruit Pizza will add some beauty to your brunch spread for Mother’s Day! Ready-made sugar cookie dough makes this recipe super easy with a dreamy cream cheese filling with hints of lemon.
You can never go wrong with refreshing fruit dishes for brunch! For this pizza, you can throw on your favorite fresh fruits or lay them out in a floral pattern for a beautiful presentation. The design is so forgiving and adds beautiful pops of color.
I love overlapping the strawberries on top of the kiwis for a bit of extra dimension and a floral effect. However, don’t be afraid to just throw the fruit on without trying to get all fancy-pants. It will still taste amazing!
Another plus is that fruit is healthy and cancels out any added fats, right? Okay, at least you get added vitamins in your dessert. Did I mention how good it tastes?
I told my husband to bring this with him to work today and he seemed to conveniently forget. That’s when the “just a sliver” thoughts went into action. The sliver seems to have turned into a quarter of the fruit pizza…the danger is real!
Speaking of danger, there were other hidden dangers in the preparation of this dessert. My daughters seemed to think that they would take advantage of my preoccupation by going in the basement and coloring their skin with markers. Thanks so much for the markers, Grandpa!
It was a bit embarrassing when my husband let them ride their bikes outside looking like rainbow people. One neighbor, apparently asked if the markers were permanent…why yes they were!
My daughter’s legs and toes are still black after scrubbing them vigorously. Maybe, I should try rubbing them with peanut butter or something?
Mother’s Day is just upon us brunch fans! Don’t forget to add a good cocktail to the mix with this Easy Fruit Pizza for maximum enjoyment. It doesn’t get any better than a Pineapple Orange Creamsicle Mimosa or a Georgia Peach Martini. Is anyone else feeling thirsty?

The only way to beat the heat is with a freezer full of 15 No-Churn Ice Cream Recipes! My mouth starting watering when I began rounding up these delectable, frozen delights from an amazing group of fellow bloggers. I just love how easy ice cream is to make without any machines or hot ovens. Heavy whipping cream, sweetened condensed milk and a few drops of alcohol (for softness) form the perfect base. I can’t wait to try out all of this goodness…I just don’t know where to start. Avocado, Moscato, Salted Caramel, Tahini, S’mores, Key Lime Pie…they’ve put my head in a spin! I need to get to the store to stock up on supplies immediately. One can never purchase enough heavy whipping cream for these kind of emergency situations.

These Lemon Gooey Butter Bars are tangy, sweet, buttery, and pure gooey goodness! The crust is easily made with yellow cake mix and topped with a bit of gooey heaven made with fresh lemon juice.
