This Baileys Chocolate Mint Martini is a fun way to bring a little green to your spring or St. Patrick’s Day. It is so flavorful with Baileys, Peppermint Schnapps, vanilla vodka and Crème de Cacao.
I made it through another Girl Scout cookie season with plenty of extra boxes to spare. I may have felt a little bad about the changes this year and purchased a few or ten too many. What better way to use them up than to make an inspired martini with a Thin Mint cookie garnishment!
This creamy martini is just so flavorful and like drinking one of these popular cookie delights. Feel free to leave out the green food coloring if that isn’t your jam. However, I strongly advise to ensure a nice floating of whipped cream and chocolate shreds make it to the top of every glass.
I prefer to use a glass cocktail shaker with measuring lines like this one here. Just watch out for some cold fingers! A vigorous shake really cools things up fast. I use this brand of chocolate liqueur, but any will really do with this recipe. Chocolate curls are easily achieved with a veggie peeler like this one. Just run the peeler down the side of your preferred candy bar (I prefer dark chocolate).
If you enjoyed this cookie-inspired Baileys Chocolate Mint Martini, be sure to check out my Samoa Cookie Martini. A Key Lime Pie Martini or Orange Creamscicle Mimosa are two of my most popular spring cocktails.

Add a generous floating of whipped cream.

This Whipped Coffee Martini has a creamy topping made by mixing instant coffee, sugar and water. The addition of vanilla vodka and Kahlua with a dusting of cocoa powder make it a delectable treat.

This Fireball Apple Cider Sangria is the perfect fall party cocktail. Fresh apples and cinnamon sticks add to this flavorful cocktail with apple cider, Pinot Grigio, Fireball Cinnamon Whiskey and a splash of ginger ale.
A good sangria is always in order when I host for Halloween or Thanksgiving. It is more festive than a plain bottle of wine and packed with all the fall flavors. I love that it can be prepared ahead of time to avoid the extra mess. That leaves room for all the fun holiday martini mixers such as a, Melted Witch or Candy Corn Martini. Seriously, the only time candy corn enters my mouth is if it is infused with vodka in martini form (so good).
Sangria can be a sneaky beast! Especially, when you add an extra bit of alcohol such as Fireball. The sweetness from the apple cider mixed with the perfectly paired cinnamon whisky does an excellent job of masking any taste of alcohol. It makes for an extra fun night of trick-or-treating and helps keep you warm. The inevitable cold snap and rain always just seems to show it’s ugly face. A fire-pit in the driveway to hand out candy is always a good idea. We got a reasonable one last year the day before Halloween and it is definitely going to be a new tradition. The combination of s’mores and sangria is my version of an adult treat.
If you’re looking to up your sangria game over the holidays, check out my Caramel Apple and Christmas Sangria. They are equally as satisfying and perfect for entertaining. You can also, always mix up a single serve version of the Fireball Apple Cider Sangria. Just add equal parts apple cider and Pinot with a shot of Fireball and splash of ginger ale. I love filling my glass with apples for days. It takes me back to my early drinking years of alcohol infused fruit.

A Butterscotch Hot Buttered Rum will warm you up over the holidays! Prepare the butter dough ahead of time by mixing cinnamon and spice and everything nice before topping with Spiced Rum and Butterscotch Schnapps. A floating of whipped cream and sundae sauce tops off this festive cocktail.
I’m not much of a tea drinker, but will take this Hot Buttered Rum all through the winter along with a Spiked Pumpkin Latte or Baileys Peppermint Hot Chocolate. It warms you up and has the perfect balance of sweetness and spice.
A nice drizzle (or 3) of Butterscotch Sundae Sauce on top of a heavy floating of whipped cream amps up the flavor even further. Cinnamon sticks always make beautiful garnishments in warm, winter cocktails. I love the idea of having one of these with a plate of no bake, Chocolate Chip Cookie Dough Truffles.
The butter dough is simply made by mixing dark brown sugar with cinnamon, nutmeg, cloves and a bit of vanilla. I recommend making the dough ahead of time so it is ready to be scooped up when the moment strikes after a hard winter’s day.
Just store it in a covered container and use within a couple of weeks for best results. If the dough is a bit firm, you can stick it in the microwave for a few seconds for easier scooping.
You can mix up your Hot Buttered Rum experience by skipping the Butterscotch. A bit of milk or cream mixed in is also optional, but highly recommended. Butterscotch Schnapps just makes everything taste so good. I love adding a shot or 2 of it to my caramel lattes or White Russians. Its like drinking candy which is always a win in my book.

Beat together the butter and sugar.
Add the cinnamon, nutmeg, cloves and vanilla; beat until smooth.
Put 2 tbsp. of batter into the bottom of a mug.
Top with boiling water and stir until dissolved.
Add the Spiced Rum, Butterscotch Schnapps and cream; stir until combined.
Garnish with a cinnamon stick, a floating of whipped cream and a drizzle of sundae syrup.
This Pumpkin Pie Martini is dessert in a glass and requires only vodka, Rum Chata and pumpkin spice creamer. Finish it off with a heavy float of whipped cream, a graham cracker rim and a sprinkle of pumpkin pie spice.
I would choose this Pumpkin Pie Martini over regular pumpkin pie any day of the week (or morning for that matter). There is just something a bit off with the texture of pumpkin pie for me. I end up adding around 3 parts whipped cream to 1 part pie when I eat it once a year for Thanksgiving. A complete waste of calories in my opinion.
Flavored vodka is always preferable when making a good dessert Martini. I love using vanilla or whipped cream vodka with this recipe, or you can even get pumpkin pie vodka. Surprisingly, all three of these flavors are readily available in my liquor cabinet. There is no need to run to the liquor store for flavored vodka if you don’t have it on hand. You can always just add a drop of vanilla to your mix as well.
If you are wanting these to be even more reminiscent of pumpkin, you can also add a drop of natural orange food coloring. A cinnamon stick or two is always an impressive garnishment in a good fall cocktail. I also, love to make a chocolate version of these martinis.
There is just something so comforting about a good fall cocktail as the weather starts to change. Today, is the first day that it actually felt like fall in the St. Louis area. It had me wanting to sip on all my favorite cocktails. A Pumpkin Spice White Russian or Spiked Pumpkin Latte are always winners in my book. Check out my cocktail page for all my favorites.

This Pumpkin Spice White Russian is a great spin on a classic cocktail for fall! A splash of pumpkin spice creamer and a dash of pumpkin pie spice blend harmoniously with vodka and Kahlua.

This Crockpot Pumpkin Spice White Hot Chocolate is perfect for entertaining! Pumpkin puree, sweetened condensed milk, pumpkin spice and white chocolate chips forge (like Mount Doom) this creamy, dreamy delight. Make an adult version by adding a shot of Butterscotch Schnapps or Rum Chata to your glass!
No one can blame you for adding a shot of Rum Chata or Butterscotch Schnapps to your over-sized mug (I may or may not have added 2). Leave it to me to turn any kind of drink into a cocktail! It kind of reminds me of my Baileys Peppermint Hot Chocolate…SO good! Just mix it up, cuddle under your blanket and watch a great Christmas flick. I just can’t get enough of Christmas Vacation because, that eggnog just looks so good, so good.
Surprisingly, my picky kids even seemed to enjoy this. That was probably, due to all the whipped cream on top. Thanks to their grandpa, for making them addicted to it! I can’t even have a latte without them running from the 2nd floor of the house to demand a big shot of it. Damned those cans of whipped cream for being so noisy (no joke).
Celebrate Halloween with this Melted Witch Martini with vodka, Blue Curacao and fruit juices. Top it with a sprinkle rim and a Twizzlers broomstick for a truly festive cocktail that will have you cackling the night away.
Clowns seem to be all the rage right now with the remake of IT (staying away from sewers for real), but never underestimate the danger of the green-faced witch! Just have plenty of vodka to dump on her so she melts into a fine green martini with a side of broom to chomp on. Drinking witch remains has me craving a Spidertini (will have to figure that one out too). The martini force is strong within me today. It must have been a very loooong week!
My Leprechaun’s Kiss Cocktail has a similar appearance to this concoction, but packs a little less punch than the martini version. I probably could have used a little less punch on Friday night. Adding 4 shots to your martini can get dangerous real fast when you make a 2nd one and then decide to “sample” a bit of red as well. I woke up feeling less than energized and forgot to add a couple key ingredients to my pumpkin pancake batter. Probably should of used instant mix this time. Luckily, my kids didn’t seem to notice! Never underestimate the ability of maple syrup to make all things taste better to kids. A drizzle of syrup in carrots and cream of wheat works wonders in this house.
A Candy Corn Martini, Spiked Caramel Latte or Caramel Apple Sangria are a few of my other favorites for fall. Check them all out on my Cocktail Page as well.

This Caramel Creme Brulee White Russian is inspired by one of my favorite seasonal latte flavors at Starbucks. The addition of vanilla and caramel syrup, a floating of whipped cream, and crushed caramel candies makes this the most decadent drink combination. The Dude would be so pleased and I’m over the moon just thinking about drinking another one!
My love for White Russians began shortly after seeing The Big Lebowski for the first time. This was not a shaken, not stirred type of character situation. The Dude just liked to lead a lifestyle of total leisure while bowling with his favorite drink in hand. Sounds good to me, especially when it includes creamy goodness and vodka!
I’m sure you’ve seen different variations of this drink before, but I really wanted to do something a bit different. I was probably drinking my favorite latte from Starbucks when I had a total cocktail epiphany…need latte and White Russian. I had no luck finding the vanilla syrup included in the latte recipe, so I decided to make my own. A simple syrup is quite easy to make and necessary for many great cocktail recipes. Just combine equal parts sugar and water and bring to a boil until thickened. Remove it from heat and add any additional flavorings.
I may have a hole in my bathroom wall days after selling my house (who would of thought a new light fixture would lead to a plumbing leak), but who cares! OH and yes, the kids are both sick again. No problem man…one of these has successfully made me forget about all my problems. The flavors are just SO good and it feels wonderful to drink my dessert. I love you Kahlua and vodka!
