Is anyone else completely burned out from having to cook every single meal? Dinner ruts are nearly impossible to avoid these days.
Luckily, recipes like these are easy to make with minimal prep time. This one is really popular with the kiddos and has made it into the regular dinner rotation.
It is definitely more challenging when it comes to getting needed ingredients lately. I feel like half my time is spent trying to score food pick up times and find places that still have needed items in stock.
I’ve been trying to buy large bags of frozen chicken whenever they are in stock. Its great to have on hand for crockpot recipes like this and my favorite, Chicken Tortilla and Chicken Gnocchi Soup.
You really can’t mess this recipe up. Just throw in the chicken and layer on the barbecue sauce, orange marmalade, orange juice and soy sauce for around 4 hours on high heat.
Around 30 minutes prior to serving time, use a ladle to remove most of the juices and whisk in a bit of corn starch to ensure optimal saucy goodness. I like to add extra ingredients to ensure plenty of sauce to spoon over the rice.
My daughter actually demands it, so having more makes things easier for everyone. Table whining needs to be kept to a minimum whenever possible for everyone’s sanity right now.
I just made spaghetti for my kids and spent most of the meal hearing about how white sauce is the only acceptable noodle topping. Yes, there is a martini in my hand as I’m writing this.

This Crockpot Orange Chicken is super easy to make with barbecue sauce, orange marmalade, soy sauce and orange juice. It is part of my weekly dinner rotation and popular with the kids. Serve it in a bowl over rice or stir-fried noodles with veggies for a complete meal.
- 4 boneless/skinless chicken breasts
- 1/2 c. Sweet Baby Rays barbecue sauce
- 1/3 c. orange marmalade
- 3 tbsp. soy sauce
- 2 tbsp. orange juice
- 1 pinch red pepper flakes (optional for added spice)
- 3 tbsp. corn starch

Add chicken to the bottom of the crockpot. Salt and pepper the tops of the chicken.

Top with barbecue sauce, orange marmalade, soy sauce, orange juice and red pepper flakes

Cook on high for around 3 1/2 hours. Remove chicken from the Crockpot and cut into large cubes.

Ladle out around 3/4 of the sauce mixture into a bowl. Add the cornstarch and whisk to combine.

Add sauce mixture and chicken back into the crockpot, lightly stir, and allow it to thicken for around 30 minutes.

Serve over rice or stir-fried noodles.
