Nothing sounds better with BBQ on a warm day than a cool pasta salad. Garlic and herb feta cheese is the star of the show in this recipe! I don’t know about you guys, but I like my food to be light and flavorful in the summertime. No need to crank up the oven and heat up the house even more, especially with the hot and humid weather we have here in the Midwest. Speaking of cranking up the oven, that reminds me that my oven is in dire need of a good scrubbing! Ugh…does anyone else wonder why the “self-cleaning” feature on the oven does nothing but cause the whole house to become a stinky/smokey mess? Last time I attempted to use this feature, I frantically attempted to stop it once things started getting out of hand and my oven became stuck shut. Anyways, I thought I was going to have a permanently locked oven and a great excuse to not cook for a couple of weeks. Well, my husband finally had to pry the oven open and it got a huge scratch at the top. Needless to say, I won’t be using that feature again. This is seriously why I need a cleaning lady! Anyways, this recipe is quick and easy and was a hit at our Father’s Day BBQ this year! My husband is really picky about his food and won’t eat most vegetables, but a tangy dressing and plenty of feta cheese must of hit the spot. I caught him spooning it out of the bowl before we left to attend a family barbecue. I am also excited to say that both of my daughters ate it as well! You know that is quite the accomplishment when you can get a one and three-year old to eat much of anything!
- 1/2 Box of Bow tie Noodles
- 1 1/2 c. Cherry Tomatoes or 1 small package cut in half
- 1/2 Medium Cucumber sliced thinly and in half
- 4 oz. package of Garlic and Herb Feta Cheese I used Athenos
- 3.8 oz. can of sliced black olives
- 1/2 Medium Red Onion sliced thinly and in half
- 1/2 c. Parmesan Cheese
- 1/2 c. Olive Oil
- 1/3 c. Red Wine Vinegar
- 1/4 c. Lemon Juice
- 1 tsp. Dried Oregano
- 3 tsp. sugar
- 1 tsp pepper

Prepare Bow-Tie noodles according to package instructions until "Al Dente". Run noodles under cool water and transfer to serving bowl. Add cherry tomatoes, cucumber, black olives, and red onion. Prepare dressing by adding olive oil, red wine vinegar, lemon juice, oregano, sugar and pepper to a salad dressing shaker. Shake dressing well to ensure ingredients are combined. Add dressing to pasta mixture and stir to cover evenly. Add Parmesan and feta cheese and stir until thoroughly mixed.
