This Homemade Toasted Marshmallow Syrup is so flavorful and simple to make with only a few ingredients. Use it to make a festive, Peep or S’mores martini or as a sweetener for your morning coffee or latte.
This recipe is really pretty simple to make and requires only mini marshmallows, sugar, water and a bit of salt and vanilla. Marshmallows are lightly toasted in the oven on the broil setting for that extra bit of campfire flavor.
Needed Ingredients
- 1 C. Mini Marshmallows
- 2 C. Water
- 2 1/4 C. Sugar
- Pinch of Salt
- 1 Tsp. Vanilla
Preparing Toasted Marshmallow Simple Syrup
- Start by setting your oven to the broil setting.
- Line a baking sheet with parchment paper to prevent any sticking.
- Spread around 1 C. of Marshmallows on the lined baking sheet.
- Broil for around 1-2 minutes or until tops of marshmallows are lightly browned.
- Add the water to a small pot and bring to a light boil.
- Reduce the heat to medium/high.
- Add the sugar and stir continuously around 2-3 minutes until mixture is thickened and sugar is dissolved.
- Add the toasted marshmallows and stir continuously until dissolved.
- Allow mixture to cool to room temperature.
- Strain any remaining marshmallow bits out of the mixture.
- Store in an airtight container in the fridge for up to 1 month.
Storing Simple Syrup
Simple Syrup is really easy to make and can be saved in a sealed glass or plastic container for up to 1 month. I recycled an old rice vinegar bottle by boiling it and removing the label for storage. Be sure to keep it refrigerated to help it last longer and to help stabilize your flavors. If the syrup starts to appear cloudy then, it is no longer good for use.
Don’t be afraid to experiment with this Homemade Toasted Marshmallow Syrup in your drinks or desserts. I have been adding it to my daily latte with a bit of chocolate sauce on top…so good! This syrup also makes the perfect S’mores or Easter Peep Martini.

Strain any remaining marshmallow bits out of the mixture by using a fine mesh strainer. Line with a cheesecloth or coffee filter for best results.

Store in an airtight container for up to 1 month.
