Turkey sausage is added to this healthy Lemon Basil Pasta Primavera for added heartiness. This pasta dish is not lacking flavor with plenty of fresh summer vegetables including broccoli, zucchini, tomato, onion and red pepper. Feel free to mix it up by adding your own favorite veggies! This savory vegetable mixture is simmered in a light sauce with fresh lemon juice, basil and white wine.
I just had to make a pasta primavera dish for the blog because it is healthy, hearty and divine! I added the turkey sausage to appease my husband and it actually added a welcome touch of spiciness to the dish (along with a dash of cayenne pepper). Although, you can easily opt to omit the sausage to make this a vegetarian dish. Okay, I am SO obsessed with using alcohol in my dishes so I couldn’t resist adding in a touch of white wine as well. I served this colorful medley of vegetables over a bed of whole wheat linguine noodles…simply delicious!
I was so hopeful that I would be able to get my daughters to eat some veggies with this dish, but I guess there wasn’t enough of a cheesey disguise (maybe mac and cheese next time)! I also knew that my husband would be picking out most of the veggies due to not liking any kind of squash or tomatoes. Oh my pickiness…it is sometimes impossible to have a house of 3 yummy tummies so this dish was about spoiling myself which is unprecedented. Well, let’s just say I enjoyed every last bite of it!
- 1 Box of Whole Wheat Linguine Noodles or preferred noodles
- 2 C. Broccoli Florets
- 14 Oz. Can Diced Tomatoes
- 1 Medium Zucchini Cubed
- 1/2 Medium Red onion Cut into thin slices and halved
- 1/2 lb. Ground Turkey Sausage
- 1/2 Red Pepper Thinly sliced
- 1/2 C. Chardonnay Wine
- 2 Tsp. Minced Garlic
- 2 Tsp. Corn Starch
- Salt and Pepper to taste
- 5 Fresh Basil leaves finely chopped
- Juice of 1 lemon

Prepare linguine noodles according to package instructions; add broccoli florets to pot during last 2 minutes of boiling.

Separate broccoli from cooked noodles and set aside.

Add ground turkey sausage to skillet; season with minced garlic and salt and pepper to taste. Saute on Medium Heat until lightly browned.

Remove turkey from skillet and set aside.

Using the same skillet and remnants; add red onion and red pepper; saute on Medium Heat for a few minutes. Add broccoli florets, turkey sausage and can of diced tomatoes.

Add basil, lemon juice, Chardonnay and Corn Starch.

Simmer and stir over Medium heat until sauce slightly thickens.

Serve over a bed of whole wheat linguine noodles.
