This No Bake Chocolate Strawberry Cheesecake Lasagna is the perfect summer dessert with Oreo Thins and fresh strawberries. Melted chocolate chips, cool whip, and cream cheese serve as the base of this creamy, dreamy treat. You can make this ahead of time and throw it in the freezer, or refrigerate it overnight. No need to heat up the kitchen when its HOT, HOT, HOT!
I am obsessed with no bake dessert recipes right now with this horrible heat wave we have been having. A nice cool, dessert is definitely in order with the right cocktail pairing of course. The most difficult part of making this recipe is trying not to eat the Oreos and strawberries as you layer them in the pan. It is only slightly annoying having to MacGyver a double boiler when you don’t own one like me. Just find two similar sized pots, fill the larger one around 1/3 the way up with water, place the smaller pot on top, and BAM. No need to waste money on a double boiler!
I took my girls to go strawberry picking last month and we ended up content with riding ponies and carnival rides. We never ventured into the field to actually pick the strawberries (major toddler meltdown time). Well, luckily I was able to buy them in bulk without having to do the hard labor. 🙂 Sometimes, the only cure for crankiness is a nice long nap in the car on the way home.
I just love the beautiful, bold color of these freshly picked strawberries. I only wish I had access to these beauties year-round. I only have a minor obsession with strawberry desserts, so I am sure you will be seeing a lot more of them in the near future. I just wish they didn’t go moldy so darn fast. Now, I wish I would’ve bought more and stuck them in the freezer for a refreshing Strawberry Margarita or Kale and Berry Smoothie….yumma, yumma, yumma!

- Skinny Watermelon Margarita
- Pineapple Orange Creamsicle Mimosas
- Red White and Blue Pina Colada
- Strawberry Margaritas with Candied Jalapenos

- 1 1/2 Packages of Oreo Thins
- 2 12 Oz. Cool Whips; thawed
- 2 8 Oz. Cream Cheese; softened
- 1 Pint of Fresh Strawberries; thinly sliced
- 1/2 C. Brown Sugar
- 2 Tsp. Vanilla
- 2 C. Semi-Sweet Chocolate Chips; melted in a double boiler

In a large mixing bowl, beat cream cheese until smooth.

Add brown sugar, melted chocolate chips, and vanilla; beat until smooth.

Fold in Cool Whip.

In a 13 X 9" pan, layer bottom of pan as follows: Oreo Thins, Chocolate Mixture, Strawberries, repeat 1 more time.

Refrigerate for 8 hours or freeze before serving.
