I’m always testing out new recipes and really think I hit the jackpot with these. A lot of people like cream cheese icing or glaze with their red velvet, but you have to try this easy, white chocolate glaze! There is no big mess to clean up with beaters and no waiting for cream cheese to soften. This glaze is made in the microwave with zero fuss! Feel free to drizzle a bit extra for red velvety greatness. I may have dipped my waffle in the bowl like chips and dip.

- 2 C. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 2/3 C. milk
- 3 tbsp. lemon juice
- 1/3 C. butter; melted
- 1/4 C. light brown sugar
- 1/4 C. sugar
- 1/3 C. cocoa powder
- 1 tsp. vanilla
- red food coloring
- 1 C. white chocolate chips
- 2 tbsp. butter
- 3 tbsp. milk or heavy cream
- 2 tbsp. light corn syrup

In a small bowl; whisk together milk and lemon juice; set aside.
In a large bowl; combine flour, baking soda, baking powder, salt and cocoa powder.
Create a well in the middle of the dry ingredients and add eggs and vanilla into the middle; lightly whisk eggs.
Pour melted butter and milk mixture over the top of the eggs and stir until combined.
Add several drops of red food coloring until desired color is achieved after stirring.
Lightly spray a round, hot waffle iron with nonstick cooking spray.
Scoop around 2/3 of a cup of waffle mixture onto the iron.
Remove waffle once firm and cooked through.

Add chocolate chips, butter and light corn syrup into a small microwave-safe bowl. Cook on 50% power for around 1 minute. Lightly stir and repeat; add milk or whipping cream and cook for an additional 30 seconds on 50% power; stirring until mixture is smooth. Immediately, drizzle glaze over tops of warm waffles.
Use cookie cutters to make heart-shapes after waffles have been cooked. Place them on top of whole waffles for a decorative touch.

This martini is up there with my favorite, Salted Caramel Chocolate Martini. If you are feeling like chocolate and need a pick me up, just had a bit of espresso in there for the win.
You will never catch me drinking plain coffee, but a good latte is a daily occurrence around here. I ended up having to buy a latte maker. I’ve used it so much, that the pitcher has been replaced 3 times now. The beauty of the machine, is that it also brews espresso to make this tasty martini and Tiramisu Pancakes (anything tiramisu is going in my mouth).
My daughter’s 6th birthday is this Friday and I’ve officially over-committed myself once again. I went out and purchased a bunch of cake decorating supplies that I probably won’t even have time to touch before the party. I will probably be up until 2 AM on Friday trying to make a troll cake with rainbow rosettes and layers of chocolate cake. Needless to say, this story will probably end with me getting on a grocery store’s website to frantically place a cake order the day before. I will let you all know how this story turns out.
To add to my conundrum, Halloween is 4 days after my daughter’s birthday. My attempts to save money on Halloween costumes by ordering them online have also backfired. My daughter’s witch costume drags the floor like a bride about to trip walking down the aisle. Yikes…the scissors will have be used for some creative hem-work. Things will go much smoother once I have my Candy Corn and Melted Witch Martinis in hand. Thank God I took vacation days next week!

- 2.25 oz. Vodka 1 1/2 shots
- 1.5 Oz. Kahlua 1 shot
- .75 Oz. Half and Half or milk 1/2 shot
- 1 Tbsp. Chocolate syrup
- 1.5 Oz. Espresso 1 shot
- Ice
- Garnishments:
- Cocoa Powder
- Chocolate candy bar shavings

Dip the rip of a martini glass in chocolate syrup and then cocoa powder.

Add around 1 C. of ice, vodka, Kahlua, half and half, espresso and chocolate syrup to a cocktail shaker.

Shake vigorously until chilled.

Strain into prepared martini glass and garnish with chocolate shavings.
Pumpkin Cinnamon Roll French Toast Bake
This Pumpkin Cinnamon Roll French Toast Bake with crumb topping is super easy to make on a busy weekend morning or holiday. The flavors of refrigerated cinnamon rolls, pumpkin spice, french toast and pumpkin combine with maple syrup for a welcome explosion of scrumptious flavors. Fall has never tasted SO good!
This French Toast Bake is so flavorful and delightfully cakey from the cinnamon rolls. You can easily eat this without the maple syrup due to all the great flavors already going on. However, I can’t fathom the idea of not smothering any kind of french toast, pancake or waffle in plenty of syrup. The flavor of syrup may vary, but it has to give my carbs a good bath until it gets nice and soggy. You brunch fans know what I’m talking about.
I don’t usually like things to be overly complicated, so I opted to make a crumb topping that doesn’t involve all the butter cutting and kneading. I just melted the butter and did a bit of stirring with a bit of flour, brown sugar, pumpkin spice and chopped pecans. This topping really makes this dish delish. Who doesn’t love plenty of sweet, crumbly delight on their breakfast? Especially, on a moist (that word disturbs me), Blueberry Lemon Muffin…winner, winner crumb topping brinner!
How is brinner not a word? My family eats brinner on a weekly basis. My husband has requested french toast and turkey sausage for dinner every Tuesday. Now, that is something I don’t mind getting on board with. Let it rain breakfast all day long! No need to wait until tomorrow morning.
After weeks (okay months) of procrastination, I finally made my first recipe video. I realized, that there was definitely a reason that I’ve been putting this project off. Learning a new video editing program was a huge pain involving hours of bugging my husband and mild (major) use of profanity. HOW ABOUT A COCKTAIL WITH THAT?
- Melted Witch Martini
- Candy Corn Martini

- 2 Tubes of refrigerated cinnamon rolls reserve icing
- 6 Eggs
- 2 C. Milk I use 2%
- 1 Tsp. Vanilla
- 1 C. Pumpkin Puree
- 2 Tsp. Pumpkin Pie Spice
- 1/4 C. Sugar
- Crumb Toppig
- 2/3 C. Flour
- 1/3 C. Brown Sugar
- 2 Tsp. Cinnamon
- 1 Tsp. Pumpkin Pie Spice
- 4 Tbsp. Butter; melted
- 1/4 C. Chopped Almonds optional

Spray Bottom of 13X9 inch baking pan with nonstick cooking spray or grease with butter.

Cut Cinnamon rolls into fourths and distribute evenly in bottom of baking pan.

In a large bowl; beat together eggs, sugar, pumpkin, milk, vanilla and pumpkin pie spice.

In a seperate bowl add; cinnamon, pumpkin pie spice, brown sugar, chopped almonds and melted butter. Stir together until crumbly.

Sprinkle crumb topping on top of french toast.

Bake at 350 degrees for around 35 minutes or until top is lightly browned.

Top with reserved cinnamon roll icing.

Serve topped with maple syrup.
