Strawberry Margaritas with Candied Jalapeños
The Strawberry Margaritas with candied jalapeños are the perfect addition to your Cinco de Mayo celebration. I just love the combination of sweet and spicy to change things up a bit. Strawberry Cream Chocolate Crepes
These Strawberry Cream Chocolate Crepes were just what I needed after an insanely busy day. The moment the batter hit my 1970’s crepe maker I was ecstatic (well…probably also elated that the thing still worked after years of dormancy).
My Mom actually gave me the crepe maker years ago and I haven’t had a chance to use it since having kids. I knew that it was time to break it out and make my husband a very happy man. I have never actually had a chocolate crepe before, but I thought that the combination of chocolate crepes, creamy goodness and strawberries would make this dessert a real showstopper. Oh Man was I right this time! …
Grilled Salmon and Peppers with Strawberry Balsamic Glaze
This Grilled Salmon and Peppers with Strawberry Balsamic Glaze is so healthy and delicious. The salmon and peppers are lightly seasoned and marinated with fresh lemon juice and olive oil and grilled to mouthwatering perfection. The salmon is then topped with a decadent strawberry balsamic glaze. I have officially just sworn off ever baking salmon in the oven ever again! I usually don’t get so excited about a dinner entree, but this dish is something that I have been craving ever since I last made it. Hmm…maybe I should make this for dinner again tomorrow! …

This Strawberry Watermelon Mojito is a refreshing combination of mint, strawberry and watermelon. It is a sure way to quench your thirst and fulfill your need for a bit of alcohol! Bomb Pop Martini
This Bomb Pop Martini has layers of red, white and blue that make a perfect martini for the 4th of July or Memorial Day. The fun, patriotic appearance is achieved with Bacardi Limon with pineapple juice, Blue Curacao and Grenadine.
Finish off this fun cocktail with a Bomb Pop on top for a fun party drink. The layers become clearer as the martini sits for. Place jars with ice around the martinis with Bomb Pops as an alcohol-free option to enjoy at the same time.
I tried several different variations and found that this combination worked the best for creating layers without being overly sweet. A bit of pineapple juice balances out the acidic flavor of Bicardi Limon. The higher density of the Blue Curacao and Grenadine helps create the layered effect.
Needed Ingredients
- 3 Oz. Bacardi Limon – You can also substitute for Citrus flavored Vodka if you prefer.
- 1.5 Oz. Pineapple Juice – This gets shaken together with Bacardi and Ice for the white layer.
- 1.5 Oz. Blue Curacao – This created the blue layer and should be chilled before using for best results.
- .75 Oz. Grenadine – It’s vibrant red color is perfect for layering and should be chilled before use.
- 1 Bomb Pop (optional) – for garnishment on top of the martini glass
Needed Equipment
- You will need a martini glass that is at least 8 Oz. for this recipe. Here is one that you can order if needed.
- A cocktail Jigger such as this one is great to have on hand for measuring alcohol.
- A cocktail shaker is needed to chill the alcohol.
Instructions
- Add the Bacardi Limon and pineapple juice to a cocktail shaker that is around 2/3 full of ice. Shake until chilled.
- Strain the pineapple juice mixture into a martini glass.
- Tilt the martini glass forward and slowly pour the Blue Curacao so that it is sliding down the glass into the mixture. Avoid pouring it directly into the liquid.
- Allow the mixture to settle.
- Tilt the martini glass forward and slowly pour around .75 Oz. of Grenadine down the glass. Avoid pouring it directly into the liquid.
- Add a toothpick to the top of a bomb pop and place it on top of the glass (optional).
