These Strawberries and Cream Layered Jello Shots are a festive Valentine’s Day treat with whipped cream vodka. A heart made out of melted white chocolate and sugar sprinkles makes the perfect topper.
I love how versatile Jello shots are for the holidays. I made these last weekend without alcohol so that my kids could enjoy them as well. The cream layer gets added flavor from pineapple juice and requires gelatin packets for firmness.
Layered Jello shots are much easier to make than you think. The hardest part is being patient enough to let each layer set before adding the next one. My Red White and Blue Jell-O Shots are a great example of layering 3 different colors horizontally. These Strawberries and Cream Layered Jello shots are easily made in a beautiful diagonal pattern by letting the first layer set at an angle in muffin tins. You can also, make horizontal layers if you want to take the easier route. Just let each layer firm up for about an hour before placing the next cooled layer.
The heart topper can be made out of white chocolate chips or white chocolate melting wafers. I prefer the taste of the Ghirardelli brand for either variety. I added around 1/2 c. of chocolate chips to a small microwave-safe bowl with a dollop of coconut oil. You can also, use a bit of butter instead. Use a sheet of parchment paper as your work service to avoid any sticking.
When microwaving chocolate, ensure that you are only using around 30-50% power to avoid the chocolate hardening when it melts. Stir in 30 second intervals until completely melted. Once the chocolate is melted, place it in a plastic baggie and trim a small slit in one of the corners. Squeeze out the chocolate into a heart shape and sprinkle with colored sugar sprinkles immediately. Work quickly to avoid the chocolate hardening!
The shot glasses are available on Amazon. You can also, substitute the more water or pineapple juice in place of the alcohol for a kid-friendly version.

These Strawberries and Cream Layered Jello Shots are a festive Valentine's Day treat with whipped cream vodka. A heart made out of melted white chocolate and sugar sprinkles makes the perfect topper.
Add the white chocolate chips or wafers to a small microwave-safe bowl.
Microwave at 30-50% power in 30 second intervals until melted; stirring frequently until melted.
Place a layer of parchment paper on the work surface.
Add the melted chocolate to a plastic baggie.
Trim a small hole in one corner of the plastic bag.
Squeeze out the chocolate into heart shapes onto the parchment paper.
Immediately sprinkle each heart with colored sugar sprinkles.
Carefully remove heart from parchment paper once cooled.
Bring one cup of water to a boil and stir into the Strawberry Jello mix until dissolved. Stir in 1/3 C. of cold water and allow to set until cooled. (May place in the fridge for around 20 minutes).
Once cooled, stir in 2/3 C. of vodka. Pour mixture into shot glasses so that they are around half full. Note: Place shot glasses into muffin tins and tilt glasses at an angle (see picture in post).
Refrigerate until thickened for around 1-2 hours.
In a small bowl, mix gelatin mix and pineapple juice together.
In a small saucepan, bring heavy whipping cream and sugar to a near boil; stirring constantly.
Remove from heat and stir in the pineapple juice mixture.
Allow to cool to room temperature (may stick it in the fridge for a bit to speed the process).
Once cooled, mix 2/3 C. of vodka into the whipping cream mixture.
Add the whipped cream mixture to the opposite side of the firmed strawberry layer in the shot glasses.
Allow to firm completely for 1-2 hours.
Top the Jello Shots with whipped cream, sprinkles and the white chocolate heart right before serving.

This Grinch Sangria with Pinot Grigio, Midori and pineapple juice is a sweet addition to your Christmas menu. A red sugar sprinkle rim and a small strawberry heart cut-out make this gorgeous cocktail festive for the holidays.
The Grinch is one of my family’s favorite films to watch over the holidays. His green body and little heart embody the grumpy character that I can relate to after an endless 2020. This cocktail mimics his appearance, but adds the sweetness that his character takes on in the end.
A heart cut-out makes the perfect garnishment to this Grinch Sangria and it is also a great addition to this Strawberry Rose Sangria for Valentine’s Day. You can use a small paring knife to carve them or make your own little aluminum cut-out. I created mine with a disposable aluminum baking pan that was leftover from last year’s holiday feast.
Use a rolling pan to flatten any indentations and cut it into strips around 3-4 inches wide. Fold each end in around 1 inch and flatten again with a rolling pin. Use a marker to shape the top part of the heart and continue working with it until the desired heart shape is achieved. Cut any remaining length off and seal with a glue gun.

In a large pitcher, add sliced strawberries, Midori, pineapple juice and Pinot Grigio.
Lightly stir ingredients and add a splash of Sprite.
Prepare the punch glasses by lightly dipping the rims in a plate of honey and a plate of red sugar sprinkles until coated.

This Easy Red White and Blue Jello Cake is bursting with flavor and colors for a great summer dessert. You can also, switch out for your favorite Jello and top it with fresh berries. A cool whip and pudding icing keeps things light and refreshing with little effort.

As you can see, I’m running a bit behind with my blog posts lately. I still wanted to post this Jello cake as one of the easiest summer desserts that kids can really have fun with. You can make this into a fun rainbow cake and even add a few sprinkles for maximum kiddo enjoyment. I will definitely be making a version of this again before the end of the summer with a few new additions.
I was concerned that the red and blue Jello would bleed together; creating an ugly brown or unwanted purple effect. I took extra precautions to prevent any color bleeding by using a children’s medicine syringe to inject the Jello and letting the blue color set in the fridge for awhile before adding the red. I was thrilled with the end results. It was so much prettier than the Jello cakes I’ve made in the past. A topping of strawberries and blueberries keeps things festive and goes well with the Jello.
We ended of having a little BBQ with the family for the 4th and had some of this cake along with my Red White and Blue Jello Shots and Red White and Blue Pinwheel Rice Krispy Treats that my mom made. Needless to say, I don’t even remember what real food was on the menu. Beware of the sneaky effect of said Jello shots my friends.
This cake looks like it has a case of the measles, but this is just to show the spacing I used for the different Jello flavors. I initially, used a butter knife to poke the cake, but then decided to go with the medicine syringe idea to prevent unwanted color bleeding.

This Easy Red White and Blue Jello Cake makes a great addition to your summer holiday menu with a light cool whip and pudding icing.
Prepare cake mix according to package directions.
Allow cake to cool and prepare Berry Blue Jello according to package directions.
Allow Jello to cool slightly before adding to cake.
Using a syringe, inject cake with around 1 tsp of Jello around every inch. You may also, just poke the cake with a butter knife and pour jello with a teaspoon.
Place cake in refrigerator and allow the Blue Jello to set for around 2 hours before adding the Red Jello. This keeps the colors from bleeding.
Prepare the Strawberry Jello according to the package instructions; allow to cool. Inject the Jello around ever 1 inch between the Blue Jello.
Refrigerate for at least 4 hours before adding the icing.
For the icing, in a large bowl; stir the vanilla pudding mix in with the cool whip until smooth and thickened. Spread over the top of the cake. Refrigerate until ready to serve.
Add sliced strawberries and blueberries to the top right before serving for best results.

This Broccoli Slaw Salad is perfect for summer holidays and BBQ’s and is super easy to make. A mixture of broccoli, raisins, almond and carrot slivers, radicchio and your favorite slaw dressing gets tossed together and chilled before serving.
This easy recipe was a huge hit with the whole family. You can make slaw dressing from scratch or purchase ready-made at the store. The ingredients can be changed up a bit to your desired taste. Fresh grapes could be switched out for raisins and red cabbage could be used in place of radicchio as desired.
This dish adds great pops of color to your meal and is so simple to throw together with your weeknight BBQ. I made this in the afternoon and served it with grilled chicken and fresh fruit for a fairly healthy meal that the whole family enjoyed. My husband was even caught red-handed eating out of the bowl after dinner. More importantly, the little ones actually consumed their veggies…miracle!
I purchased reduced-fat coleslaw dressing from the grocery store, but you can very easily make your own. You will likely have all the ingredients on hand as it is primarily made of mayo, lemon juice, sugar, salt and pepper. I don’t usually use mayo, so prefer to buy the dressing already made to avoid wasting the leftovers.
Father’s day is right around the corner and I plan on making this along with my favorite, Skinny Kale Caesar Salad and Strawberry Cheesecake Fluff. I’ll leave the mandatory warm dishes to the rest of the family. I may even make my dad’s favorite, Strawberry Rhubarb Cobbler. Its one of the easiest desserts I’ve ever made and uses frozen rhubarb.
