This Pepper Bowl Egg Casserole is the perfect breakfast and makes a beautiful brunch presentation for guests. A simple egg casserole with turkey sausage, green onion and cheddar is cooked in a hollowed out green pepper that is lightly brushed with garlic and olive oil. This is so delicious served with a topping of salsa for an extra flavor boost and beautiful color contrast. Let me tell you, I knew this was a huge hit when my husband managed to eat all 3 of the peppers I made as an appetizer before dinner! Well, at least I got a few bites! You can eat as much or as little of the pepper bowl as you would like, but there is something magical that happens to the flavor of the egg when it roasts in the oven surrounded by the pepper. The juices blend so harmoniously with the flavors in the egg casserole. You just have to try it for yourself.
This was such a great way to mix things up a bit from the usual egg casserole or quiche that I typically make. The added bonus is that the peppers are way healthier than the buttery crust of a quiche. I just love how cute they look! I am not an eater of beef or pork and always use turkey or chicken in my recipes, but you can easily substitute pork sausage instead. You can also change it up a bit and add your other favorite cheeses and veggies. I also love adding feta to my eggs!
Now I just need to figure out a way to get my kids to eat eggs! I have tried everything to make them desirable, but my daughters only seem to like eggs if they are in french toast. I guess there is a french toast lover gene in the family!

- 6 Eggs; beaten
- 1/2 C. Milk
- 1/3 C. Chopped Green Onion
- 1/2 Lb. Turkey or Pork Sausage
- 1/2 C. Shredded Sharp Cheddar Cheese
- 3 Green Peppers
- 1/4 C. Olive Oil
- 1/4 Tsp Garlic Salt
- 1/2 Tsp Black Pepper
- Garnishments:
- Shredded Cheddar Cheese
- Salsa

Cut the top 1/4 of each green pepper off and hollow out the inside of the pepper; removing all seeds.

In a small bowl mix together olive oil, garlic salt and pepper.

Brush the outsides of the pepper with the olive oil mixture.

Place pepper bowls on a cookie sheet lightly sprayed with cooking spray.

In a skillet, brown the sausage; season to taste with salt, pepper and Italian seasoning (more seasoning required for turkey sausage)

Add the green onion and saute for a couple minutes.

Remove skillet from heat and mix in the cheddar cheese.

Add 1/3 of the sausage mixture to each pepper bowl.

Beat together the eggs and milk; add salt and pepper to taste.

Pour 1/3 of the egg mixture into each pepper boat.

Bake at 375 degrees for around 30 minutes until the egg is firm.

Top with extra shredded cheddar and salsa if desired.
