I am in love with these raspberry and orange cheesecake parfaits! Â They have the desired rich and creamy texture of cheesecake without nearly as much fat due to the addition of yogurt. Â I enjoy experimenting with different flavors and really like how the orange flavor blends with the raspberries. Â I was thinking about whether this could be a breakfast item and have concluded…it sure can! Â Fruit+Yogurt=Partially Healthy breakfast combination (nevermind the matter of delicious cream cheese).Â
These also make a great easy dessert for company due to their beautiful appearance and quick prep time.  They are great for the summer…I mean who really wants to crank up the hot oven when it is 90 degrees out?
My husband actually LOVED these! Â He licked the mixing bowl clean to hold himself over while the parfaits chilled in the fridge. Â Unfortunately, I am unable to report my 3 year old’s opinion due to her refusal to eat dinner once again. Â Her eating habits are so strange…one day she will like a particular dish and the next she will not touch it (typical 3 year old).
I am so content right now after having my parfait (possibly also due to the beautiful silence throughout my house ). My poor husband is passed out on the couch right now.  He is absolutely exhausted from spending the day alone with the girls!  Awww…I guess some men aren’t as equipped to handle constant chaos.  Maybe he is having sweet dreams of raspberry and orange cheesecake parfaits.
- Cheesecake Mixture:
- 8 oz Cream Cheese; softened
- 1/4 C. Sugar
- 3 Tbsp. Orange Juice
- Zest of half of a small orange
- Other Parfait Layers:
- 1/2 C. Graham Cracker Crumbs
- 1 1/2 C. Vanilla Yogurt
- 2 C. Fresh Raspberries

Prepare Cheesecake mixture by mixing together softened cream cheese with sugar until thoroughly combined.

Add orange juice and zest and continue mixing until combined.

Layer in dessert serving dish:
-
raspberries
-
/4 of the cheesecake mixture
-
/4 of the Crushed Graham Crackers
-
/4 of the Vanilla Yogurt
-
Top with raspberries
-
Chill in the refrigerator for around 3 hours prior to eating.
