This Skinny Kale Caesar Salad with a reduced fat dressing is so creamy and delicious without all the extra fat! I love adding some extras in with my caesar salad…this so flavorful with cherry tomatoes, mushrooms, French green beans, asiago crisps and fresh shaved parmesan. This lightened up Caesar dressing is super easy to make with Greek yogurt, light mayo, garlic and lemon juice as some of the ingredients. You will not want to buy store-bought dressing again!
Have I mentioned that I have a serious love for all things salad? I usually eat salads at least once per day and a chunk of iceberg just isn’t going to cut it for me. There has to be some nutritious kale or spinach with some extra veggies and some added crispy goodness. In this case, these asiago crisps are pure crunchy delight with this caesar. The dressing is lightened up without taking away the usual creamy, dreamy texture that I love.
Why is it that caesar salad is usually lacking other yummy veggies? I love throwing in some extras for an even more delightful salad eating experience and it definitely doesn’t hurt to throw in some nice big chunks of parmesan (oh lawd)! I am getting the salad fever just thinking about it. I love you baby kale!
What a delightful Valentine’s Day or single’s awareness weekend (LOL…so true)! My husband and I had a nice dinner out (YUUUUMMMY sea bass over risotto situation) and we saw, “How to be Single”. The movie was pretty cute and definitely empowering…you go girl! My husband seemed to also enjoy it (not as much as his dinner).
I also made some chocolate covered strawberries with my 4 year old daughter. By that, I mean that I let her sprinkle a copious amount of toppings on them. We had some pretty interesting flavor combinations…chocolate chips with a sprinkle of oreo, graham cracker crumbs and sprinkles (total perfection situation :)). Okay, I literally just had to go eat one of them!
Okay, back to the salad…my sweet tooth is not to be trusted! This salad is really delicious and you will not believe that the dressing is light! You can add a little chicken or shrimp for a complete lightened up meal…yummy, yummy, crunch, crunch. Enjoy!
- 4 Oz. Baby Kale around 5 C. Packed
- 2 Oz. Fresh French Green Beans
- 2 C. Sliced Mushrooms baby portabella
- 2 C. Grape or Cherry Tomatoes; halved
- 1/2 C. Fresh Shaved Parmesan
- Asiago Cheese Crisps to taste
- Dressing:
- 1/2 C. Nonfat Greek Yogurt
- 1/3 C. Reduced Fat Mayo
- 2 Tsp. Spicy Brown Mustard
- 2 Tbsp. Worcestershire Sauce
- 2 Tsp Garlic; minced
- 1/2 Tsp. Pepper
- 1/4 Tsp Salt
- 1/4 C. Lemon Juice
- 1/3 C. Parmesan; grated

In a mixing bowl, stir together all dressing ingredients until thoroughly combined.

Add Baby Kale, tomatoes, mushrooms, french green beans, and shaved parmesan to a large salad bowl.

Spoon desired amount of salad dressing over the salad and toss until coated.

Top with Asiago Cheese Crisps and black pepper.
