This Skinny Spinach and Artichoke Dip is delicious without all the extra fat! Nonfat greek yogurt, reduced fat cream cheese and a touch of reduced fat mozzarella are added with a generous amount of spinach and artichokes. You won’t even be able to tell that this is lower in fat! It is the perfect game day appetizer for those looking to lighten things up a bit.
Spinach and Artichoke Dip is probably one of my favorite appetizers of all time. I refused to eat spinach as a child unless it was loaded with cheese sauce. I think that this creamy dip just reminds me of those days when I used to hide all my veggies in napkins or feed them to the dog. I am definitely experiencing these hardships with my daughters. So of course, I am thrilled when I can get them to eat a little spinach even if it has a few additives (they actually love this dip…hoooooray)! No worries…I am sure they will be eating spinach and kale salads like me in no time!
You can make this dip even healthier by serving it with raw veggies such as carrots…YUM time! I also like to get a little dip action going with baked multigrain tortilla chips. Okay, so perhaps from time to time my willpower fails me and I make some nice crispy garlic bread and slather this glorious dip all over it. This can be easily justified to oneself by a mere reminder that this dip is lightened up so the additional calories are easily canceled out. See…it’s that easy folks!

- 1 Package of Frozen chopped spinach; thawed and dried
- 1 8 oz. Can of Artichoke Hearts; quartered
- 1 8 oz. Package of Reduced Fat Cream Cheese; softened
- 1/2 C. Nonfat Greek Yogurt
- 1/4 C. Grated Parmesan
- 1/4 C. Grated Romano
- 1 Tsp. Dried Basil
- 1/4 Tsp. Salt
- 1/2 Tsp. Pepper
- 1/2 Tsp. Dried Oregano
- 2 Tsp. Minced Garlic
- 2 Tsp. Worcestershire Sauce
- 1/2 C. Reduced Fat Shredded Mozzarella Cheese
- Garnishment:
- 1/2 C. Grape Tomatoes; quartered

In a large mixing bowl; stir together greek yogurt and cream cheese.

Add Parmesan, Romano, Basil, Salt, Pepper, Oregano, Garlic, and Worcestershire and stir until blended.

Lightly stir in spinach and artichokes.

Add to a small prepared casserole dish.

Top with shredded mozzarella.

Bake at 375 Degrees for around 20 minutes.

Sprinkle top with grape tomatoes before serving.

Use tortilla chips, carrots or bread for dipping.
