These Strawberry Bellinis are a refreshing bubbly treat to bring in your New Year or for any celebration. I just can’t get enough of these and love the combination of strawberry puree, brandy and moscato sparkling wine! You can also substitute your favorite brand of champagne or make them without the brandy for a great brunch cocktail.
I hope you all had a great Christmas holiday! I ended up hosting 2 dinners and a brunch, so I was a little bit cooked out last week. I had an over-the-top brunch with Best Breakfast Egg Casserole, Spicy Biscuits and Gravy, Blueberry Granola Pancakes, Raspberry Cream Cheese Coffee Cake (coming soon) and fruit salad. My in-laws are such fans of my breakfast food that they decided to make another hour long drive to come dine with us again the next morning! It was apparently, “worth the drive”.
Okay, so my house has officially become a Toys R’ Us! I keep cramming more toys in every nook and cranny. I pity the person who tries to open my coat closet right now…LOL. I will be SO happy when our basement is finally finished. It has been a work in progress for the last year or so.
I am geared up and ready to go for a great New Year’s celebration with these ambrosial Strawberry Bellinis. They really are like drinking your dessert! I have been obsessed with these ever since I first had one at Olive Garden. They are really such a sweet and light drink that would make an excellent after dinner beverage.
- 1 C. Fresh Strawberries
- 1/2 C. Ice
- 1 Shot 1.5 oz of Brandy
- 3 Tbsp. Simple Syrup
- Sparkling Moscato Wine or Champagne

Add Strawberries, Ice, Brandy and Simple Syrup to a blender; blend until smooth.

Strain mixture through sieve and pour half of mixture into 2 champagne glasses.

Top with Sparkling Moscato Wine and lightly stir.

Garnish each glass with a fresh strawberry.
