This Crockpot Chicken Gnocchi Soup is super easy to throw together and tastes very similar to the coveted Olive Garden recipe with carrots and celery! I love how inexpensive this recipe is to make with simple ingredients. Pair it with a garlic bread stick for an easy weeknight meal.
This is not the first time I’ve attempted to create this recipe. I made a version of it last year, but considered it to be a bit of a fail. The seasonings seemed to be off and I put way too much chicken in the crockpot. Everything seemed to fall into place this time around and I’m left wondering where the heck did it all go?
I literally, only got about 1/3 of a cup of soup and found nothing but a couple of gnocchi in the crockpot when I went back for more later. Very tricky indeed! Perhaps, I should get another crockpot and double the recipe if my family is going to conveniently be over next time I make it.
This week continues to be of disastrous proportions! My daughter has been sick for over a week now and had to go back to the doctor again for a stronger antibiotic for an ear infection. Oh, and her eye is looking pink again along with a fever. Yikes, the OCD in me is coming out strong. I spent much of my evening disinfecting surfaces after a few too many lattes. The urge to put a couple shots of Baileys in another one are strong.
I use my crockpot like crazy in the wintertime and also love to make, Creamy Tortellini Spinach and Mushroom Soup. This one, is equally as good and is a great vegetarian option. I’m off to riffle through my liquor cabinet and pray that everyone isn’t sick for the holiday.
This easy, Crockpot Chicken Gnocchi Soup is the perfect weeknight meal with carrots and celery.
In a skillet, melt butter on medium/high heat.
Add onion, minced garlic, carrots and celery.
Season with salt and pepper.
Sprinkle with thyme and saute for around 3 minutes until onion becomes translucent.
Add vegetable mixture to the bottom of a crockpot.
Top with uncooked chicken breasts.
Sprinkle tops of chicken with poultry seasoning, salt and pepper.
Add chicken broth.
Cook on High heat for 3 hours.
Remove chicken from crockpot and cut into small cubes. Return chicken to the crockpot and add the gnocchi.
Lightly whisk flour into the milk and add to the crockpot. Lightly stir, add garlic powder, cover and cook on low heat for 30 minutes.
Add parmesan cheese and lightly stir. Continue cooking on low heat with the lid removed for around 10 minutes before serving.
You can repeat the process of adding additional flour and milk until desired thickness is reached. Milk is a healthier option, but Half and Half can be substituted for a richer flavor.

I’m a huge fan of salmon and it just happens to be super healthy for you with Omega-3’s. It surprises me that a lot of people that I talk to just don’t like it. I’m thinking that they just haven’t had it like this before! You can maintain healthiness by lightly sauteing it in a couple of teaspoons of olive oil in a nonstick pan. This gives you the perfect flaky texture with a slightly crispy outside….so good. The right toppings, sauces and seasonings make this recipe enjoyable even for the salmon doubters.
I love a good balsamic glaze and thought that using some of the juices from the mandarin oranges would give it a great flavor boost to go with the delicious avocado salsa. Chopped nuts add a welcome crunchy texture to the mix. You could also use walnuts in place of the almonds for another dose of super food delight.
I’ve been trying to eat more avocados lately due to the health benefits and great taste! They are just so good on a variety of foods and transform a sandwich from zero to hero. I think they could even add nutrients to a great cocktail recipe…stay tuned for that kind of wackiness.

I’m loving the beautiful rainbow of colors with this recipe on a dreary, gray day outside. The weather here is ultra strange with 60 degree temperatures one day and 30 the next. Its no wonder my kids are sick right now. Spring can’t come fast enough for me! Maybe we can go a week without complete germ infestation. I’m fighting the fight with my kids’ gummy Vitamin C’s. I probably need to take like 6 of them, right? When in doubt, take a shot of whiskey to disinfect the interiors.
My struggles with temporary apartment living continue! In hindsight, building a new house probably wasn’t the best idea with two little kids to relocate twice. How the heck did we accumulate SO much crap in 5 years? I was punished in full for having a clothes shopping addiction. There were so many trash bags full of clothes that I gave to Goodwill, only be left with a closet stacked to the ceiling with clothes on hangers that have nowhere else to go. I punished myself by “temporarily” canceling by Stitchfix delivery. At least until I have a closet big enough to handle another sock.
Okay, let’s get back to this beautiful dish for a second after my ramblings. This rainbow effect is created by making vertical stripes of your green veggies, potatoes and chicken. All tossing is done right in the pan for the win. An easy spice rub with a bit of lemon juice and olive oil makes the chicken so flavorful and delicious…yes, please! I only wish I had more leftovers to eat right now.
