A tropical twist on a classic delight makes this chicken salad absolutely delectable. It is loaded with grapes, strawberries, apples, pineapples, celery and pecan pieces and greek yogurt is substituted for a healthier option. I definitely had a case of the Mondays today. I didn’t want to leave my two little girls behind to go to work. However, two near-miracles happened today that really turned things around for me. 1) My husband actually cut the grass (including using the weed whacker). 2) I actually brought my lunch to work with me today. I know what you are thinking…these may seem like mundane everyday occurrences, but believe me they don’t happen often! I actually didn’t plan on making my lunch today, but once again forgot to put my laptop in my car before going to work. After saying a few choice words to myself, I turned around the car and came back home to retrieve it. Then, I decided that since my productivity levels were already in the toilet I should just go ahead and actually make a lunch while I was back at home. I hastily smothered the chicken salad on the delicious pita bread and threw it in a bag. After finally arriving at work, I dealt with the usual plethora of issues that have built up after the weekend (Ugg). Meanwhile, my stomach continued to turn and I couldn’t concentrate any longer. I rushed to the refrigerator to retrieve my prize! Let me just say, this didn’t disappoint one bit! The flavors created a wondrous medley that dare I say was even more delicious after sitting in the fridge overnight. There is a really good chance that I will be packing my lunch again tomorrow.

- 2 C. of cooked chicken; cubed or shredded
- 2 Tbsp. Light Mayo
- 2 Tbsp. Greek Yogurt
- 1/4 C. Strawberries; chopped in small pieces
- 1 Celery Stalk; chopped in small pieces
- 1/4 C. Grapes; cut in half
- 1/4 C. Canned pineapple chunks; cut in half
- 1/4 C. apple slices chopped into small pieces
- 1/4. C. Almond pieces
- 1 Tsp. Basil
- 1/2 Tsp. Onion Powder
- 1/2 Tsp. Dill Weed
- Salt and Pepper to taste
- Sandwich bread of choice I used pita bread

Place chicken, strawberries, celery, grapes, pineapples, apples, almonds, greek yogurt, light mayo, basil, dill weed, onion powder, salt and pepper in a medium mixing bowl. Thoroughly combine all ingredients and place in refrigerator overnight for the best result. Serve on bread of choice.

Note: You can substitute with all greek yogurt or light mayo.
