This Vanilla Pudding Banana Bread is so moist and flavorful with chocolate chunks and pecan pieces. Make it in a bundt or loaf pan and personalize it with your favorite nuts and chocolate. This is hands down my favorite banana bread recipe of all time!
I really like the combination of cinnamon and bananas like in my Healthier Banana Bread, but the addition of vanilla pudding adds so much moisture and flavor. You can chop up your favorite chocolate candy bars or even use chocolate chips. I highly recommend using dark chocolate with pecan pieces…so good! This batch actually has leftover dark chocolate Easter bunnies chopped up.
To Bundt or Not to Bundt
I would definitely go with a bundt pan for this recipe if you have it. It really adds to that coveted moisture and is prettier to look at for entertaining. You could also use two 9 x 5 inch loaf pans if desired. Ensure you check them after around 50 minutes of baking.
To Top or Not to Top
A good chocolate glaze like from my Banana Split Bundt Cake would be so good on this. However, a simple dusting of confectioner’s sugar is all that is really needed with this deliciousness. You could really just eat it without a topping at all and enjoy all that vanilla and banana flavor.
The Ingredients
Here is a rundown of all the ingredients you will need.
- 1 C. Sugar
- 2 C. Flour
- 1 box of Instant Vanilla Pudding
- 1 Tsp. Baking Soda
- 1 Tsp. Kosher Salt
- 4 Ripened Bananas; mashed
- 3 Eggs
- 1/3 C. Applesauce
- 1/2 C. Canola Oil
- 1 C. Roughly Chopped Dark Chocolate Candy Bars (or preferred chocolate)
- 1/4 C. Chopped Pecans
- Confectioner’s Sugar for dusting
Directions
- Preheat oven to 325 degrees.
- In a medium bowl; combine the flour, salt, pudding and baking soda.
- Beat together the eggs, sugar, applesauce and oil.
- Slowly beat in the flour mixture until combined.
- Fold in the bananas, chocolate chunks and pecans into the mixture.
- Add mixture to a bundt pan that has been thoroughly greased and floured.
- Bake for around one hour or until a toothpick comes out clean after inserting.
- Allow cake to cool for several minutes, gently cut along edges of pan with a knife before flipping.
- Once cooled, top with confectioner’s sugar using sifter if desired.
