Ingredients

  • 2 whole bananas; mashed
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 3 tbsp. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. kosher salt
  • 4 tbsp. butter; melted
  • 2 c. milk
  • 1/3 c. applesauce
  • 2 tsp. vanilla
  • 1/2 c. mini chocolate chips
  • 2 eggs

Instructions

  1. In a large bowl, mix together flour, sugar, baking powder, baking soda, salt and cinnamon.

  2. Heat the milk in a glass measuring cup or microwave-safe bowl until warm.  

  3. Whisk melted butter and vanilla into the milk.

  4. Create a well in the middle of the flour mixture.  Add eggs and lightly whisk.

  5. Add applesauce, bananas and milk mixture to the flour mixture.  Lightly stir until combined.  Stir in chocolate chips.

  6. Spray a skillet with non-stick cooking spray and heat to medium-low.

  7. Add around 1/4 c. of pancake batter to the skillet and cook for around 3 minutes or until bottom is golden brown and batter begins to bubble on the edges.  Flip and cook around 2 more minutes or until heated through.
