This Strawberry Rhubarb Cobbler is super easy to throw together with frozen rhubarb.

Ingredients

  • 2 1/2 c. frozen rhubarb; chopped
  • 1 lb. fresh strawberries; sliced
  • 1 c. sugar + 1 tsp.
  • 3/4 c. milk
  • 1/4 c. butter; melted
  • 1/2 tsp. almond extract
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. flour

Instructions

  1. Lightly grease an 8x8" baking pan.

  2. Spread strawberries and frozen rhubarb onto the bottom.

  3. In a mixing bowl; combine flour, sugar, baking powder and salt.

  4. Stir in milk and almond extract.

  5. Pour dough mixture over the top of the fruit.  Do not mix into the fruit.

  6. Pour melted butter over the dough and gently swirl with a toothpick or butter knife.

  7. Lightly sprinkle the top with 1 tsp. of sugar.

  8. Bake at 350 degrees for around 1 hour.

Recipe Notes

Serve warm with a scoop of ice cream over the top.
