Baked Apples with Oatmeal Filling

Apples are baked and stuffed with apple, raisin and cinnamon flavored steel-cut oats.

Ingredients

  • For Baked Apples:
  • 6 Apples I used Fuji
  • 1/4 C. Butter
  • 2 Tbsps. Brown Sugar
  • 1 Tsp. Cinnamon
  • 1/2 Tsp. Vanilla
  • 1 C. Apple Cider
  • For Oatmeal:
  • 1 1/2 C. Steel-Cut Oats
  • 6 C. Milk
  • 1 1/2 C. Apples; cut into 1" cubes
  • 1/2 C. Raisins
  • 1/3 C. Brown Sugar
  • 1 Tsp. Cinnamon
  • 1/2 Tsp. Vanilla
  • Garnishments:
  • 1/2 C. Vanilla Greek Yogurt
  • Pecan or Walnut Bits
  • Caramel Sundae Sauce

Instructions

  1. Preheat oven to 375 degrees.
  2. Cut around a half inch off the top and bottom ends of each apple; leaving enough on the bottom to hold your oatmeal.
  3. Using a melon baller, remove insides of apples.
  4. In a small saucepan; melt butter, add brown sugar, vanilla and cinnamon. Stir until sugar is dissolved.
  5. Remove from heat, brush brown sugar mixture over the insides and tops of apples.
  6. Place apples in a 13X9" baking pan.
  7. Pour apple cider in the bottom of the baking pan.
  8. Cover pan with aluminum foil and bake for around 30 minutes until apples are softened.
  9. While apples are baking, prepare the oatmeal.
  10. In a medium saucepan, prepare steel-cut oats with milk according to directions.
  11. During last 5 minutes of cook time, add apple chunks, raisins, brown sugar, cinnamon and vanilla.
  12. Stir until combined and continue to simmer until oats are cooked.
  13. Remove baked apples from the pan and place on a tray or plate.
  14. Fill apples with prepared oatmeal.
  15. Garnish with a dollop of yogurt, pecan bits and a drizzle of caramel sundae syrup.
