Banana Split Chocolate Bundt Cake

The flavors of a banana split packed into a moist Chocolate Bundt Cake

Ingredients

  • 2 Ripened Bananas; mashed
  • 1 C. Strawberries; diced
  • 1 8 oz. can crushed pineapple; drained
  • 1 C. Sour Cream
  • 2 Eggs
  • 1/3 C. Canola Oil
  • 1 1/2 C. Sugar
  • 2 C. Flour
  • 2 Tsp. Baking Soda
  • 1/2 C. Cocoa Powder
  • 1/4 Tsp. Salt
  • 1/2 C. Semi-Sweet Chocolate Chips; melted
  • Glaze:
  • 1 C. Semi-Sweet Chocolate Chips
  • 1 Tbsp. Light Corn Syrup
  • 3 Tbsp. Butter
  • 1/2 Tsp. Vanilla
  • Garnish:
  • 1/4 C. Pecan or Walnut Bits

Instructions

  1. Grease and flour a Bundt Pan and preheat oven to 350 degrees.
  2. Add mashed banana, eggs, vanilla and sugar to a large mixing bowl.
  3. Beat together until smooth and beat in sour cream.
  4. In a separate bowl; combine flour, cocoa powder, salt and baking soda.
  5. Slowly beat four mixture into banana mixture.
  6. Melt Chocolate chips in a small bowl in the microwave (cook for around 30 seconds at a time and stir to avoid sticking)
  7. Add melted chocolate into mixing bowl and continue beating until combined.
  8. Stir in strawberries and crushed pineapple.
  9. Pour into prepared Bundt Pan.
  10. Bake for around 40 minutes or until a toothpick comes out clean.
  11. Allow cake to cool completely before adding Chocolate Glaze:
  12. In a double boiler on Medium Heat; add chocolate chips, light corn syrup, butter and vanilla.
  13. Stir frequently until mixture is smooth and melted.
  14. Immediately drizzle glaze over the top of the cooled Bundt Cake.
  15. Sprinkle with walnut or pecan bits.
