These Funfetti Cookies are the perfect combination of soft and chewy.  Vanilla pudding gets added for additional flavor and moisture.  Plenty of festive sprinkles makes them a great addition for everyday enjoyment or special celebrations.

Ingredients

  • 2 1/2 C. Flour
  • 3/4 C. Sugar
  • 2/3 C. Brown Sugar; firmly packed
  • 1 Box Instant Vanilla Pudding
  • 2 sticks butter; softened
  • 1 tsp. Vanilla
  • 1/4 tsp. Salt
  • 1 C. Sprinkles (+ extra for topping if desired)

Instructions

  1. Preheat oven to 350 degrees.  Mix together the flour, pudding mix baking soda and salt.


  2. In a separate mixing bowl cream together the butter, vanilla, sugar and brown sugar until combined.

  3. Mix in the eggs.

  4. Slowly beat in the flour mixture until combined.

  5. Stir in the sprinkles.  

  6. Scoop by rounded tablespoon unto an ungreased cookie sheet; forming into a ball.  Dip the top of each cookie scoop into a small bowl of sprinkles (optional).  Space around 1 1/2 inches apart.

  7. Bake for around 12 minutes or until the cookie is light golden brown.  Remove from oven and immediately transfer to a cooling rack.  

  8. Store in airtight containers once cooled completely.
