Hawaiian Sweet Roll and Berry Bread Pudding with Lemon Sauce

Hawaiian Sweet Rolls are the base of this delight with fresh berries and an easy lemon pudding sauce.

Ingredients

  • 18 Hawaiian Sweet Rolls 1 1/2 packages
  • 5 Eggs
  • 4 C. 2% Milk
  • 2 Tsp. Vanilla
  • 1 C. and 1 Tsp. White Sugar
  • 2 Tsp. Ground Cinnamon
  • 2 C. Fresh Berries I used half strawberries and half blueberries
  • Sauce:
  • 1 Box of Instant Lemon Pudding
  • Zest and juice of 1 Lemon
  • 1 1/3 C. Milk
  • Garnishments:
  • Fresh berries
  • Whipped cream

Instructions

  1. Lightly grease a 13 X 9" pan with cooking spray.
  2. Break up half of the rolls into medium sized pieces and place in the bottom of the baking pan.
  3. In a medium bowl; mix together berries with 1 tsp. of sugar.
  4. Add half of berry mixture to the top of the bread pieces.
  5. Top with the remaining bread pieces and the remaining fruit.
  6. In a large bowl; whisk together the eggs, milk, sugar, cinnamon, and vanilla.
  7. Evenly pour the egg mixture over the top of the bread.
  8. Lightly press bread down to ensure all pieces are coated.
  9. Allow bread to moisten outside of the oven for 20 minutes.
  10. Bake at 350 Degrees for 40-45 minutes or until the top of the pudding is lightly browned.
  11. Prepare the lemon sauce:
  12. Whisk together pudding mix, milk, lemon juice and zest.
  13. Allow sauce to refrigerate while the pudding is baking.
  14. Serve the bread pudding warm topped with lemon sauce, whipped cream and fresh berries.
