Italian Pasta Salad

This Italian Pasta Salad is always a hit with cherry tomatoes, mozzarella, pepperoni, sweet peppers, olives and artichokes.  A bit of everything bagel seasoning really adds a special touch to this potluck favorite.

Ingredients

  • 12 Oz. Tri- Colored Rotini Noodles
  • 1 pint cherry or grape tomatoes
  • 2 2.25 oz. cans sliced black olives
  • 1/2 c. red onion; finely diced
  • 6 small tri-colored sweet peppers; small diced
  • 5 oz. Pepperoni (around 1 cup) I use turkey pepperoni
  • 1 bottle Italian Salad Dressing I use around 3/4 of the bottle
  • 8 oz. Fresh Mozzarella; torn into chunks
  • 1/2 C. Shredded Parmesan
  • 14 oz. can Artichokes; quartered

Instructions

  1. Prepare pasta "al dente" per package instructions.

  2. Run pasta under cool water while draining.

  3. In a large bowl; add the artichokes, red onion, sweet peppers, tomatoes pepperoni and black olives. 

  4. Add the Italian salad dressing (around 3/4 of the bottle) and Everything Bagel Seasoning.

  5. Add the Mozzarella and shredded parmesan and lightly toss until combined.

  6. Add the Mozzarella and shredded parmesan and lightly toss until combined.

  7. Refrigerate overnight or for at least 6 hours in a sealed container.

  8. Lightly stir before serving. Add the remaining dressing if desired.
