Lemon Blueberry Bread

A Lemon Blueberry Bread with a bit of lemon glaze and plenty of fresh berries.

Ingredients

  • 1 1/2 C. Flour + 1 Tbsp.
  • 1/2 Tsp. Kosher Salt
  • 2 Tsp. Baking Powder
  • 1/2 C. Milk
  • 2 Eggs
  • 1/4 C. Fresh Lemon Juice
  • 2/3 C. Sugar
  • 1/3 C. Butter; melted
  • 1 C. Fresh Blueberries
  • Glaze:
  • 1/2 C. Powdered Sugar
  • 2 Tbsp. Lemon Juice
  • Zest of 1/2 a lemon

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour or coat an 8 X 4 inch baking pan with baking spray.
  3. Combine 1 1/2 C. Flour, salt, and baking powder.
  4. In a separate bowl; beat together eggs, lemon juice sugar and melted butter.
  5. Slowly beat in flour mixture.
  6. Beat in milk.
  7. in a separate bowl; carefully mix blueberries with 1 tbsp. of flour.
  8. Fold blueberries into mixture.
  9. Bake for around 1 hour or until golden brown and toothpick comes out clean.
  10. Remove from oven and allow to cool.
  11. Once cool; beat together powdered sugar, lemon juice and zest.
  12. Drizzle over the top of the bread.
