Lemon Gooey Butter Bars

These Lemon Gooey Butter Bars are made with a yellow cake mix crust and a tangy gooey butter topping.

Ingredients

  • Crust:
  • 1 Box Yellow Cake Mix
  • 1 Stick of Butter; melted
  • 1 Egg
  • 1 Tsp. Vanilla
  • Filling:
  • 1 8 oz. Cream Cheese; softened
  • 1/3 C. Fresh Lemon Juice
  • Zest of 1 lemon
  • 3 Eggs
  • 3 C. Confectioner's Sugar
  • 4 Tbsp. Butter; melted
  • Topping:
  • 1/4 C. Confectioner's Sugar

Instructions

  1. Preheat Oven to 350 Degrees.
  2. Lightly grease a 13X9" baking pan.
  3. Prepare Crust Mixture:
  4. In a large mixing bowl; beat together yellow cake mix, egg, melted butter and vanilla.
  5. Press crust into the bottom of the prepared baking pan.
  6. Prepare the filling:
  7. In a large mixing bowl; beat cream cheese until smooth.
  8. Beat in eggs 1 at a time until mixture is smooth.
  9. Beat in melted butter.
  10. Beat in lemon juice and lemon zest.
  11. Slowly add in confectioner's sugar and beat until smooth.
  12. Pour filling over the top of the crust and spread until coated evenly.
  13. Bake for 40-45 minutes until lightly browned on edges.
  14. Allow to cool and sprinkle top with confectioner's sugar.
  15. Serve room temperature.
