Lemon Poppy Seed Pancakes with Lemon Glaze

Lemon poppy seed pancakes are topped with a tangy lemon glaze.

Ingredients

  • 1 1/2 C. Flour
  • 2 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • 1/4 C. Sugar
  • 1/4 Tsp. Salt
  • 1 1/4 C. Milk
  • 1 Egg
  • 1/2 C. Fresh Lemon Juice
  • 2 Tbsp. White Vinegar
  • 2 Tbsp. Poppy seeds
  • 2 Tbsp. Canola Oil
  • Glaze:
  • 2 Tsp. Lemon Extract
  • 2 C. Powdered Sugar
  • Zest of 1 Lemon
  • 1/4 C. Milk

Instructions

  1. Prepare Lemon Glaze:
  2. Add powdered sugar, milk, lemon extract and lemon zest to a mixing bowl.
  3. Beat with a mixer until thoroughly combined.
  4. Prepare Pancakes:
  5. In a large Bowl, mix together flour, baking powder, baking soda and salt.
  6. Stir in milk, egg, lemon juice, sugar, white vinegar and oil.
  7. Stir in poppy seeds.
  8. Heat a nonstick skillet to medium heat and lightly spray with cooking spray.
  9. Add around 1/3. C. of pancake batter to the skillet for each pancake.
  10. Cook each side until lightly browned.
  11. Serve topped with lemon glaze.
