Pumpkin Spice Doughnuts

Pumpkin and spice flavors make this tasty cake doughnut with plenty of homemade cream cheese icing.

Ingredients

  • Doughnuts:
  • 1 1/4 C. Flour
  • 2/3 C. Sugar
  • 1 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1/4 Tsp. Salt
  • 3/4 C. Canned Pumpkin
  • 2 Tsp. Pumpkin Pie Spice
  • 2 1/2 Tbsp. Melted Butter
  • 1 C. Buttermilk
  • 1 Egg
  • 1 Tsp. Vanilla
  • Icing:
  • 4 oz. Cream Cheese
  • 3 Tbsp. Butter; softened
  • 1/2 Tsp. Vanilla
  • 3 C. Confectioners Sugar
  • Garnishments:
  • Sprinkles

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly spray doughnut tin with nonstick cooking spray.
  3. In a medium bowl, mix together flour, baking powder, baking soda and salt.
  4. In a large mixing bowl, whisk together egg, sugar, pumpkin, buttermilk, melted butter, pumpkin spice and vanilla.
  5. Slowly whisk in dry ingredients until smooth.
  6. Place batter in a large plastic baggie.
  7. Cut a small slit in one corner of the plastic bag to pipe your batter into the doughnut tins.
  8. Fill doughnut tins around 2/3 full of batter for a thicker doughnut.
  9. Bake for around 10 minutes or until tops have lightly browned.
  10. Remove from tin and allow to cool completely before icing.
  11. Prepare Icing:
  12. Beat together butter, cream cheese, vanilla and confectioners sugar until smooth.
  13. Spread desired amount over the tops of each doughnut.
  14. Add sprinkles to the tops if desired.
