Skinny Chicken Alfredo with Noodles

A leaner version of Chicken Alfredo that won't have you missing out on all that butter and heavy cream.

Ingredients

  • 3 Boneless/Skinless Chicken Breasts
  • 6 Cloves of garlic; minced
  • 4 Tsp. Olive Oil
  • 2 C. 2% Milk
  • 1/4 C. Flour
  • 1 C. Grated Parmesan Cheese
  • 2/3 C. Chicken Broth
  • 1/2 Tsp. White Pepper
  • 1/4. Tsp. Salt
  • 1/8. Tsp. Nutmeg
  • 2 Tbsp. Fresh Parsley leaves; roughly chopped
  • 1 lb.. of your favorite whole grain noodles

Instructions

  1. Begin preparing noodles according to package directions.
  2. Season chicken breasts with salt and pepper; cut into around 1 1/2 inch chunks
  3. In a bowl, whisk together milk, chicken broth and flour; set aside.
  4. In a nonstick skillet, heat 2 tsp. olive oil to medium/high heat.
  5. Add chicken and sauté until opaque for around 4 minutes.
  6. Remove from heat, place chicken on a plate and set aside.
  7. Wipe out pan, add 2 tsp. of olive oil on Medium/High heat.
  8. Add garlic and sauté for around 1 minute until fragrant.
  9. Add milk mixture and continue whisking until thickened.
  10. Stir in salt, white pepper and nutmeg.
  11. Remove from heat; stir in parmesan and parsley until blended.
  12. Stir in chicken and cooked noodles.
  13. Serve immediately.
