No need to dirty extra dishes with these creamy, dreamy Slow Cooker Garlic Asiago Mashed Potatoes.

Ingredients

  • 7 Large Yukon Gold Potatoes
  • 1 1/2 C. Chicken Broth
  • 10 Cloves of Garlic; roughly chopped
  • 1 8 oz. Cream Cheese; cut into small cubes
  • 2 C. Shredded Asiago Cheese
  • 1 Tsp. White Pepper
  • 2 Tsp. Fresh Chives; roughly chopped
  • 4 Tbsp. Butter
  • Salt to taste

Instructions

  1. Wash, peel potatoes and cut into large cubes.
  2. Add potatoes and garlic to crockpot, top with chicken broth.
  3. Cook on High for 3 hours or until potatoes are tender when poked with a fork.
  4. Drain around half of the broth before mashing.
  5. Mash potatoes using a potato masher.
  6. Add cream cheese, butter, asiago cheese, white pepper and salt.
  7. Beat until smooth.
  8. Top with fresh chives.
  9. Note: You may prepare a little ahead of time and keep your crockpot on Warm until ready to serve!

Recipe Notes

You may substitute 2 tbsp. of garlic powder in place of garlic cloves; add it at the same time as the cheese and butter.
