Strawberries and Cream Baked Oatmeal

Oatmeal is swirled with fresh strawberries, lightened cream and baked for a firmer texture.

Ingredients

  • 2 C. Oats
  • 1/3 C + 1 Tbsp. Light Brown Sugar
  • 1 Tsp. Baking Powder
  • Pinch of Salt
  • 1/4 Tsp. Nutmeg
  • 1 Egg
  • 1 C. Nonfat Greek Yogurt
  • 1 C. Skim Milk
  • 2 Tsp. Vanilla
  • 2 1/2 Tbsp. Butter; melted
  • 2 Tbsp. Lemon Juice
  • 2 Tbsp. Light Corn Syrup
  • 1 1/2 C. Sliced Strawberries
  • Optional:
  • 3 Tbsp. Pecan Bits

Instructions

  1. In a medium bowl; whisk together egg, greek yogurt, skim milk, butter, lemon juice and vanilla.
  2. In a large bowl; mix together oats, brown sugar, baking powder, salt and nutmeg.
  3. Add cream mixture to oats and stir.
  4. Add light corn syrup and stir.
  5. Add 1 C. of Strawberries to mixture and stir.
  6. Pour into greased 8X8 inch baking pan.
  7. Top with remaining 1/2 C, of sliced strawberries.
  8. Sprinkle with pecan bits (optional) and 1 tbsp. of light brown sugar.
  9. Bake at 350 degrees for 30-35 minutes until top of oatmeal begins to lightly brown and firm.
