White Chip Pumpkin Pancakes

Pumpkin pancakes with white chocolate chips and spices; topped with caramel and maple syrup.

Ingredients

  • 2 C. Flour
  • 2 1/2 Tsp. Baking Powder
  • 1/4 Tsp. Salt
  • 1/2 Tsp. Pumpkin Spice
  • 1 Tsp. Cinnamon
  • 1/4 C. Brown Sugar
  • 3/4 C. Pumpkin Puree
  • 1/2 C. White Chocolate Chips
  • 1 Egg; beaten
  • 1 3/4 C. Milk
  • Garnishments:
  • Pecan Bits
  • Maple Syrup
  • Caramel Sundae Syrup

Instructions

  1. Add flour, baking powder, cinnamon, pumpkin spice and salt to a large mixing bowl; stir until combined
  2. Add pumpkin puree, brown sugar, egg, milk and white chocolate chips; stir until thoroughly combined.
  3. Heat a griddle or skillet to Medium/Low Heat and lightly spray with cooking spray.
  4. Add around a half cup of pancake batter for each pancake and cook until top of pancake begins to lightly bubble.
  5. Flip and cook for around 3 more minutes; checking to ensure the pancake doesn't burn.
  6. The secret to a good pancake is to cook it a little longer on a lower heat setting so that the pancake doesn't burn on the inside and cooks through the inside!
  7. Top with caramel syrup, maple syrup and pecan bits.
