Broccoli Cheddar Breakfast Strata with Blender Hollandaise Sauce

A Broccoli Cheddar Egg Strata with turkey bacon and a topping of blender hollandaise sauce.

Ingredients

  • Around half a loaf of French Bread; cut into 1" cubes
  • 12 oz. Package of Turkey Bacon
  • 2 Tbsp. Butter
  • 12 Eggs
  • 2 C. Milk
  • 4 Cloves of Garlic; minced
  • Half of a Yellow Onion; finely diced
  • 4 C. Fresh Broccoli Florets; stems removed
  • 1 1/2 C. Shredded Sharp Cheddar Cheese
  • 2 Tsp. of freshly chopped chives
  • Hollandaise Sauce:
  • 1 Stick of Butter
  • 1/4 C. Lemon Juice
  • 4 Egg Yolks
  • 1/4 Tsp. Cayenne Pepper
  • Salt to Taste

Instructions

  1. Spray the bottom of a 13x9" baking pan with nonstick cooking spray.
  2. Line the bottom with a single layer of bread cubes.
  3. Cut turkey bacon in half; sauté until lightly browned and crispy.
  4. Transfer to a plate lined with paper towels.
  5. Wipe out skillet.
  6. Add a single layer of turkey bacon to the top of the bread cubes (will have extra).
  7. Cut broccoli florets into smaller pieces so that they are no bigger than an inch or so wide.
  8. Add butter to the skillet; heat to medium high heat.
  9. Add garlic and onion; sauté for around 2 minutes until onion slightly translucent.
  10. Add broccoli and salt/pepper to taste; saute until broccoli is slightly tender for around 3 minutes.
  11. Remove from heat.
  12. In a large bowl; whisk together eggs, milk and salt/pepper to taste.
  13. Gently stir in broccoli mixture and cheddar cheese.
  14. Pour over the top of the turkey bacon.
  15. Preheat oven to 375 degrees.
  16. Allow egg mixture to set for around 5 minutes before baking.
  17. Bake for around 30 minutes or until top is lightly browned and center is firm.
  18. Prepare Hollandaise sauce:
  19. Add egg yolks, lemon juice, salt and cayenne pepper to the blender bowl.
  20. Melt butter in a bowl in the microwave until bubbly, but not browned.
  21. Slowly add in hot butter while blending; blend for around 30 seconds after all butter has been added.
  22. Add more salt or cayenne pepper to taste as needed.
  23. Pour sauce over casserole while warm.
  24. Top with fresh chives and enjoy!
