Greek Pasta Salad

A fresh and tangy dressing compliment this Greek Pasta Salad with garlic and herb feta cheese!

Ingredients

  • 1/2 Box of Bow tie Noodles
  • 1 1/2 c. Cherry Tomatoes or 1 small package cut in half
  • 1/2 Medium Cucumber sliced thinly and in half
  • 4 oz. package of Garlic and Herb Feta Cheese I used Athenos
  • 3.8 oz. can of sliced black olives
  • 1/2 Medium Red Onion sliced thinly and in half
  • 1/2 c. Parmesan Cheese
  • 1/2 c. Olive Oil
  • 1/3 c. Red Wine Vinegar
  • 1/4 c. Lemon Juice
  • 1 tsp. Dried Oregano
  • 3 tsp. sugar
  • 1 tsp pepper

Instructions

  1. Prepare Bow-Tie noodles according to package instructions until "Al Dente". Run noodles under cool water and transfer to serving bowl. Add cherry tomatoes, cucumber, black olives, and red onion. Prepare dressing by adding olive oil, red wine vinegar, lemon juice, oregano, sugar and pepper to a salad dressing shaker. Shake dressing well to ensure ingredients are combined. Add dressing to pasta mixture and stir to cover evenly. Add Parmesan and feta cheese and stir until thoroughly mixed.
