Healthier Banana Bread

A healthier version of banana bread made with whole wheat flour, applesauce and nonfat greek yogurt. Simply moist and delicious!

Ingredients

  • Banana Bread:
  • 1/2 C. Applesauce
  • 3 Ripened Bananas; Mashed
  • 2 Eggs
  • 2/3 C. Nonfat Greek Yogurt
  • 2 Tsp. Vanilla
  • 1 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Salt
  • 1 1/2 Tsp. Baking Soda
  • 2 1/2 C. Whole Wheat Flour
  • 1 1/2 C. White Sugar
  • Cinnamon Crumb Topping:
  • 1/2 C. Brown Sugar
  • 1/2 C. Flour
  • 3 Tsp. Melted Margarine
  • 1 Tsp. Cinnamon
  • 1/3 C. Chopped Walnuts

Instructions

  1. Preheat Oven to 325 Degrees.
  2. Add Applesauce, Bananas, Eggs, Sugar, Yogurt, Vanilla, and Cinnamon to a large mixing bowl and beat with an electric mixer until thoroughly combined.
  3. Mix together Flour, salt and baking soda in a separate bowl.
  4. Gradually add flour mixture to the banana mixture and continue to beat until thoroughly combined.
  5. Grease and flour 2 small bread loaf pans.
  6. Pour half of batter into each pan.
  7. Prepare Crumb Topping:
  8. Melt margarine in a small bowl in the microwave.
  9. Add melted margarine to bowl with brown sugar, flour, cinnamon and chopped walnuts.
  10. Mix together with spoon (may need to use your fingers!)
  11. Add half of crumb topping to each loaf of banana bread and lightly press down.
  12. Bake for around 55 Minutes to 1 Hour until toothpick comes out clean.
