Finally…an addictive banana bread that I can eat without feeling guilty about it!!! I made this Healthier Banana Bread with whole wheat flour, nonfat greek yogurt and applesauce. The cinnamon crumb topping makes this bread even more delectable! I know what you are thinking, it can’t be as moist and delicious as oily bread with white flour. YES, it certainly can! The only downside to this bread is that I can’t stop eating it (I guess it really isn’t healthy to eat half a loaf in one day).
My family enjoys this recipe so much that we even sing a banana song while my daughter and I are preparing it (no really…I am not kidding here). We are really that bananas for banana bread. Okay, I am annoying myself here. HA…I guess these are the kind of things that excite you when you hardly get out of the house. Now I know what people were talking about when they told me you aren’t really a mother until you have at least 2 kids. Okay…so I don’t totally agree with that. Anyone knows that 1 kid is hard enough, but having 2 makes everything a little more challenging. Such as cooking banana bread and taking pictures of it. My 3 year old wanted to be involved with all the prep work and my 1 year old wanted me to hold her the whole time. This was followed by her removing all my props from the table right after setting it up. She also got the first grab-and-go sample of banana bread. LOL…what a zoo!!!
Hmmm…my husband just ate 3 pieces while sitting next to me. He said the pictures were making him hungry.
- Banana Bread:
- 1/2 C. Applesauce
- 3 Ripened Bananas; Mashed
- 2 Eggs
- 2/3 C. Nonfat Greek Yogurt
- 2 Tsp. Vanilla
- 1 1/2 Tsp. Cinnamon
- 1/4 Tsp. Salt
- 1 1/2 Tsp. Baking Soda
- 2 1/2 C. Whole Wheat Flour
- 1 1/2 C. White Sugar
- Cinnamon Crumb Topping:
- 1/2 C. Brown Sugar
- 1/2 C. Flour
- 3 Tsp. Melted Margarine
- 1 Tsp. Cinnamon
- 1/3 C. Chopped Walnuts

Preheat Oven to 325 Degrees.

Add Applesauce, Bananas, Eggs, Sugar, Yogurt, Vanilla, and Cinnamon to a large mixing bowl and beat with an electric mixer until thoroughly combined.

Mix together Flour, salt and baking soda in a separate bowl.

Gradually add flour mixture to the banana mixture and continue to beat until thoroughly combined.

Grease and flour 2 small bread loaf pans.

Pour half of batter into each pan.

Prepare Crumb Topping:

Melt margarine in a small bowl in the microwave.

Add melted margarine to bowl with brown sugar, flour, cinnamon and chopped walnuts.

Mix together with spoon (may need to use your fingers!)

Add half of crumb topping to each loaf of banana bread and lightly press down.

Bake for around 55 Minutes to 1 Hour until toothpick comes out clean.
