Lemon Basil Pasta Primavera

Fresh summer vegetables and turkey sausage are seasoned with lemon and basil and served over a bed of whole wheat linguine noodles.

Ingredients

  • 1 Box of Whole Wheat Linguine Noodles or preferred noodles
  • 2 C. Broccoli Florets
  • 14 Oz. Can Diced Tomatoes
  • 1 Medium Zucchini Cubed
  • 1/2 Medium Red onion Cut into thin slices and halved
  • 1/2 lb. Ground Turkey Sausage
  • 1/2 Red Pepper Thinly sliced
  • 1/2 C. Chardonnay Wine
  • 2 Tsp. Minced Garlic
  • 2 Tsp. Corn Starch
  • Salt and Pepper to taste
  • 5 Fresh Basil leaves finely chopped
  • Juice of 1 lemon

Instructions

  1. Prepare linguine noodles according to package instructions; add broccoli florets to pot during last 2 minutes of boiling.
  2. Separate broccoli from cooked noodles and set aside.
  3. Add ground turkey sausage to skillet; season with minced garlic and salt and pepper to taste. Saute on Medium Heat until lightly browned.
  4. Remove turkey from skillet and set aside.
  5. Using the same skillet and remnants; add red onion and red pepper; saute on Medium Heat for a few minutes. Add broccoli florets, turkey sausage and can of diced tomatoes.
  6. Add basil, lemon juice, Chardonnay and Corn Starch.
  7. Simmer and stir over Medium heat until sauce slightly thickens.
  8. Serve over a bed of whole wheat linguine noodles.
  9. Enjoy!
