Pepper Bowl Egg Casserole

Egg casserole is cooked in a delectable pepper bowl.

Ingredients

  • 6 Eggs; beaten
  • 1/2 C. Milk
  • 1/3 C. Chopped Green Onion
  • 1/2 Lb. Turkey or Pork Sausage
  • 1/2 C. Shredded Sharp Cheddar Cheese
  • 3 Green Peppers
  • 1/4 C. Olive Oil
  • 1/4 Tsp Garlic Salt
  • 1/2 Tsp Black Pepper
  • Garnishments:
  • Shredded Cheddar Cheese
  • Salsa

Instructions

  1. Cut the top 1/4 of each green pepper off and hollow out the inside of the pepper; removing all seeds.
  2. In a small bowl mix together olive oil, garlic salt and pepper.
  3. Brush the outsides of the pepper with the olive oil mixture.
  4. Place pepper bowls on a cookie sheet lightly sprayed with cooking spray.
  5. In a skillet, brown the sausage; season to taste with salt, pepper and Italian seasoning (more seasoning required for turkey sausage)
  6. Add the green onion and saute for a couple minutes.
  7. Remove skillet from heat and mix in the cheddar cheese.
  8. Add 1/3 of the sausage mixture to each pepper bowl.
  9. Beat together the eggs and milk; add salt and pepper to taste.
  10. Pour 1/3 of the egg mixture into each pepper boat.
  11. Bake at 375 degrees for around 30 minutes until the egg is firm.
  12. Top with extra shredded cheddar and salsa if desired.
