Skinny Kale Caesar Salad

A lightened up Kale Caesar salad with a Greek yogurt based salad dressing.

Ingredients

  • 4 Oz. Baby Kale around 5 C. Packed
  • 2 Oz. Fresh French Green Beans
  • 2 C. Sliced Mushrooms baby portabella
  • 2 C. Grape or Cherry Tomatoes; halved
  • 1/2 C. Fresh Shaved Parmesan
  • Asiago Cheese Crisps to taste
  • Dressing:
  • 1/2 C. Nonfat Greek Yogurt
  • 1/3 C. Reduced Fat Mayo
  • 2 Tsp. Spicy Brown Mustard
  • 2 Tbsp. Worcestershire Sauce
  • 2 Tsp Garlic; minced
  • 1/2 Tsp. Pepper
  • 1/4 Tsp Salt
  • 1/4 C. Lemon Juice
  • 1/3 C. Parmesan; grated

Instructions

  1. In a mixing bowl, stir together all dressing ingredients until thoroughly combined.
  2. Add Baby Kale, tomatoes, mushrooms, french green beans, and shaved parmesan to a large salad bowl.
  3. Spoon desired amount of salad dressing over the salad and toss until coated.
  4. Top with Asiago Cheese Crisps and black pepper.
