Strawberry Cheesecake Fluff

This easy, Strawberry Cheesecake Fluff is perfect to throw together for summer BBQ's and potlucks.

Ingredients

  • 1 lb. fresh strawberries; mulled and quartered
  • 1 box instant cheesecake pudding mix
  • 2/3 c. sour cream
  • 2 c. mini marshmallows
  • 2 tbsp. sugar
  • 1 8 oz. Cool Whip; defrosted
  • 1 tbsp. lemon juice
  • 1/4 c. graham cracker crumbs

Instructions

  1. In a large bowl; mix together sour cream, sugar and lemon juice.

  2. Add pudding mix and cool whip; stir until smooth.

  3. Gently fold in marshmallows and strawberries.  Sprinkle top with graham cracker crumbs.

  4. Cover and refrigerate for at least 3 hours before serving.
