Tropical Chicken Salad Sandwich

A tropical twist on a classic delight makes this chicken salad absolutely delectable. It is loaded with grapes, strawberries, apples, pineapples, celery and pecan pieces.

Ingredients

  • 2 C. of cooked chicken; cubed or shredded
  • 2 Tbsp. Light Mayo
  • 2 Tbsp. Greek Yogurt
  • 1/4 C. Strawberries; chopped in small pieces
  • 1 Celery Stalk; chopped in small pieces
  • 1/4 C. Grapes; cut in half
  • 1/4 C. Canned pineapple chunks; cut in half
  • 1/4 C. apple slices chopped into small pieces
  • 1/4. C. Almond pieces
  • 1 Tsp. Basil
  • 1/2 Tsp. Onion Powder
  • 1/2 Tsp. Dill Weed
  • Salt and Pepper to taste
  • Sandwich bread of choice I used pita bread

Instructions

  1. Place chicken, strawberries, celery, grapes, pineapples, apples, almonds, greek yogurt, light mayo, basil, dill weed, onion powder, salt and pepper in a medium mixing bowl. Thoroughly combine all ingredients and place in refrigerator overnight for the best result. Serve on bread of choice.
  2. Note: You can substitute with all greek yogurt or light mayo.
