Ingredients

  • 1 c. Sugar
  • 2 c. Flour
  • 1 box Instant Vanilla Pudding
  • 1 tsp. Baking Soda
  • 1 tsp. Kosher Salt
  • 4 ripe bananas; mashed
  • 3 eggs
  • 1/3 c. applesauce
  • 1 c. roughly chopped dark chocolate candy bar
  • 1/4 c. chopped pecans
  • confectioner's sugar for dusting (optional)

Instructions

  1. Preheat oven to 325 degrees.


  2. In a medium bowl; combine the flour, salt, pudding and baking soda.

  3. Beat together the eggs, sugar, applesauce and oil.  

  4. Slowly beat in the flour mixture until combined.

  5. Fold in the bananas, chocolate chunks and pecans into the mixture.

  6. Add mixture to a bundt pan that has been thoroughly greased and floured.

  7. Bake for around one hour or until a toothpick comes out clean after inserting.

  8. Allow cake to cool for several minutes, gently cut along edges of pan with a knife before flipping.

  9. Once cooled, top with confectioner's sugar using sifter if desired.
