A Monster Mudslide is the perfect adult treat for these hot summer months! It is far from your average muddy dream with the addition of ice cream, peanut butter, chocolate chips and M&M’s to the usual Kahlua and Baileys confection.
I definitely started my 4th of July celebration with a bang this weekend after indulging in this sinful treat! I started off thinking a regular mudslide would suffice, but it somehow turned into a colossal concoction that has me drooling just thinking about it. The biggest regret was forgetting to clear away the bowl of candy and chocolate chips after taking pics. Idle little hands seemed to have found the treasure once again. Note to self…need to make a virgin version of this for the kids next time!
You can change this recipe up a bit by adding whatever extra little chocolate candies you have on hand. Its like drinking a DQ blizzard with the bonus of alcohol! I was so stoked when I found these red, white and blue M&M’s to add a bit of a 4th of July vibe. I just love these kind of win-win situations in life!
I hope your holiday is getting off to a better start than ours. My poor hubby got a horrible bout of the stomach flu or food poisoning over the weekend (no, not from my cooking). Anyhow, drinking alone is okay in these kind of situations, right? A sparkler or 2 on top of any cocktail could be so satisfying. Especially, when trying to stay focused on writing a blog post when the sun is just calling out to you for a day of endless fun.

- 3 oz. Baileys
- 1.5 oz. Kahlua
- 1.5 oz. vodka vanilla flavored is best
- 1 1/2 C. vanilla ice cream
- 1 C. crushed ice
- 2 Tbsp. mini chocolate chips
- 2 Tbsp. M&M's
- 1 Tbsp. peanut butter
- Garnishments:
- chocolate syrup whipped cream, M&M's, mini chocolate chips

In a large goblet or beer stein cocktail glass; swirl the inside of the glass with chocolate syrup from the bottom of the glass to the top.

Add all ingredients to a blender bowl; blend until combined.

Pour into prepared cocktail glass.

Top with whipped cream, more chocolate syrup, M&M's and chocolate chips.
