This Strawberry Watermelon Mojito is a refreshing combination of mint, strawberry and watermelon. It is a sure way to quench your thirst and fulfill your need for a bit of alcohol! I have deemed it necessary to institute a new weekly excuse to drink and have come up with “Saturated Saturdays”. I admittedly was a day late this week, but nonetheless this drink was divine.
I went to Chilli’s on Saturday night for a much-needed night out (those don’t happen much anymore after the 2nd kid) and I was mesmerized by a picture of a watermelon margarita staring me down during dinner. I really wanted to order one of those bad boys, but I decided against it due to already having a couple of appletinis the night before (completely necessary due to my brother’s birthday celebration). However, I was plagued with regret the rest of the night. I kept thinking how refreshing a drink with watermelon sounded. This also took me back to a trip I took to Costa Rica after graduating high school (a few short years ago). I have never seen so much watermelon in my life! Apparently, blended watermelon is a way of life over there. I decided it was time to take immediate action when I woke up on Sunday morning. I immediately sent my husband to the grocery store to pick up some Rum and watermelon. I then, took the long 1 mile car ride to my parents’ house to steal some of the fresh mint leaves out of their garden. Midway through my experimentation, I decided that strawberries would make an excellent addition to this already delicious drink. The results were stupendous! Lightweights like myself beware, you can’t taste the alcohol and it sneaks up on you rather quickly (regretful).
- 8 oz. Watermelon; blended
- 6 Strawberries
- 15 Fresh mint leaves
- 2 oz. Fresh Lime Juice
- 4 oz. Rum
- Ice

Blend watermelon and strawberries together in a blender.

Pour into shaker and add mint leaves, Rum, and Ice.

Pour into 2 tall cocktail glasses and garnish with a strawberry and small slice of watermelon.

A sure way to quench the thirst by watermelon mojito in hot summer days. Strawberry is a nice addition. Ginger can also add a different taste in this drink!
