No need to wait for the next cookie delivery with this recipe!
Yay guys…it’s Girl Scout Cookie season! I am always more than happy to order a few (or 10) boxes of Girl Scout cookies from my friend’s daughter every year. Hey…it goes towards a good cause, right? It is always complete torture waiting for what seems like months and months to get those boxes once they are ordered! My goal was to recreate my favorite Girl Scout cookie, the Samoa, in drink form so I didn’t have to wait another day! You just can’t go wrong drinking your favorite cookie after all!
I only had a slight mishap with the development of this recipe. I put the coconut on a baking sheet to toast in the oven, put it on broil, and got slightly distracted with the kids. Oh if I could count the times I have burnt or ruined something due to total mayhem in the kitchen. Anyhow, the coconut literally caught on fire and left the house in a horrible smokey state. Ha…nothing like having to open the windows when it is 20 degrees outside. I have learned my lesson…coconut is extremely flammable and only needs to be toasted for a hot minute!
