This Kale and Berry Yogurt Smoothie is a such a healthy and delicious way to start the new year off right! It is loaded with strawberries, blueberries, raspberries, kale and Greek yogurt with a perfect touch of sweetness from cranberry juice.
You will not believe that you are drinking something that is actually healthy!
Smoothies are so easy to make on a busy morning and are great for on the go. That is absolutely essential for me during the week…leaving the house with 2 little ones is quite the chore. Thank goodness for dry shampoo and lattes! I inevitably, end up forgetting something or another…my laptop, cell phone, extra diapers, lunches, my sanity. Well, at least we all get a good breakfast in. It is the one meal that we NEVER skip…better to be late than hungry and grumpy (says the queen of perpetual lateness).
My aunt was over for Christmas dinner and told me that she has a kale and berry smoothie on a regular basis. I decided that it was definitely worth a try since berry smoothies are my favorite. I will say, the taste is great with the berries and it is worth adding a little kale in exchange for numerous health benefits. I was just reading about how kale is loaded with vitamins, fiber, and iron to name a few of them. I think that I am going to start trying to incorporate it into more of my meals for sure. I haven’t really ventured too much outside of it in the occasional salad.

- 1 C. packed Kale
- 1 C. Strawberries
- 1/2 C. Blueberries
- 1/2 C. Raspberries
- 1 C. Nonfat Greek Yogurt
- 1/2 C. Cranberry Juice
- 1 C. Ice not necessary if Frozen fruit is used

Add all ingredients to blender bowl and blend until smooth.

My brother sent me a pic of all the ingredients he puts into his smoothie and I told him I was super jealous. I am not a crazy yogurt fan but I LOVE Greek yogurt so you have won me over here (plus, I like the idea of kale over spinach!)
That’s funny…it seems like I am always missing one ingredient or another whenever I go to make something! I am a bit of a late bloomer with this kale thing, but can’t get enough of it now!
